Yes. But personally I wouldn't use olive oil as it will impart its taste to the bread. I've tried it in both cornbread and biscuits and tho the texture was OK the taste wasn't. I do use olive oil in herb breads. You can also use peanut oil which, like olive oil, is a mono-saturated oil. I also use peanut oil for biscuits. I have tried Smart Balance and Promise margarine for both cornbread and biscuits and have been satisfied w/ the results. I use the oil because it is easier to incorporate. When substituting a liquid fat for a solid fat in a recipe you add the liquid fat as the last ingredient whereas you "cut in" the solid fat w/ the meal or flour before adding other ingredients.

No, not if you want real corn bread.

Here's a recipe that uses olive oil in cornbread. You can just eliminate the rosemary if you don't want it. If you want to just substitute it, I'm sure you can, just use the measurements in this recipe compared to the ones in yours to gauge the ratio of shortening to olive oil you need.

Ingredients:
1 cup flour
1 cup cornmeal
1 cup buttermilk
1/3 cup olive oil
1/4 cup sugar
2 tablespoons chopped fresh rosemary
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg

Directions:
Preheat oven to 350. Grease or spray one 8x8 baking pan or an 8 inch pie tin. In a medium bowl, whisk together the rosemary, cornmeal, flour, baking powder and soda, sugar and salt. Beat in the egg, buttermilk and oil until well combined. Pour into pan and bake 25 minutes or until golden brown and a toothpick inserted in the middle comes out clean.

Yes. I would go with the Smart balance. It might be a texture thing.

No! You need Shortening! Call a neighbor to borrow shortening or pay them for some!!

Yes insted of 1fourth cup of oil use one third cup of margarine now that is for 9by11 pan

it usually states on the package if is NOT reccommended for baking. Check the package. I wouldn't use it. I use butter
