Fried chicken with mayo??!

Did you dry the chicken parts, slather with mayo, and dredge in a flour, salt and pepper mix before frying?

Fried Chicken

Ingredients:
30 Saltine crackers, crushed into coarse crumbs
2 Tbsp all purpose flour
2 Tbsp dry potato flakes
1 tsp seasoned salt
1/2 tsp ground black pepper
1 egg
1/4 cup vegetable oil
6 skinless, boneless, chicken breast halves

Instructions:
Place crackers in a large resealable bag, add flour, potato flakes, salt and pepper, and mix well.
Beat egg in a bowl, heat oil in a large pan over medium high heat.
One by one, soak chicken in egg, then place in bag with crumb mixture, seal bag, and shake well to coat chicken.
Reduce heat to medium and cook coated chicken in pan for 15 to 20 mins, turning frequently until golden brown and juices run clear.

After strip chicken and mix with mayo.

1/4 cup light mayonnaise
1 1/2 teaspoons curry powder blend
1 teaspoon lemon juice or vinegar
few drops of hot sauce
1 pound chicken breast, cut in strips
1 cup fine dry bread crumbs
1/2 teaspoon seasoned salt
2 teaspoons dried parsley flakes
PREPARATION:
Heat oven to 375°.
Combine the mayonnaise, curry powder, lemon juice, and hot sauce. Coat the chicken pieces with the mixture.

In another bowl, combine the bread crumbs, salt, and parsley flakes.

Roll coated chicken strips in the crumb mixture. Arrange chicken in a lightly greased shallow baking dish. Bake for 30 to 35 minutes, turning once about halfway through cooking. The chicken should be tender and juices will run clear when pierced with a fork.
Serves 4.

I like the one up there^. I have made it with ranch dressing. you mix the ranch with some flour, then you dip the chicken in it, then you dip in your breading and fry! I also learned from watching "good eats" that if you soak your chicken in buttermilk overnight, drain it, then dip it in the breading and fry it, you get some of the moistest tastiest fried chicken I have ever tasted in my life. Even better than from any restaurant or fast food chain! Just remember to put the seasoning on the chicken before you dip it into the flour, since the spices burn easily, and you lose most of the flavor in the pan the other way!

Fry some chicken.
Dip it in mayo.
