After you cut up a potatoe, how long will it last?!
Answers: I want to prepare as much of my weekday meals as I can on the weekend and I was wondering if I could cut up my potatoes and place them in water to keep and if so how long will they last?
It is best to start from scratch with potatoes, as if you peel them and store them in water, you haven't saved much time but have water-logged potatoes that will taste differently. If you want to make them ahead, plan on potato salad, or baked potatoes, which can be reheated later in week. You can also make mashed potatoes and reheat them. But as to cutting up raw potatoes, it will not be worth the effort and few minutes saved.
Great idea to cook ahead, though, and having most vegetables cut up ahead of time is a great time saver. Potatoes, though, turn black, and soak up any water they are in.
When I'm trying to decide if something can be done ahead, I think of what is in the freezer department, such as mashed potatoes in TV dinners, etc. When shopping, pick up ideas from the freezer department, and you will know what can and can not be cooked ahead of time.
I just found a good plastic covered bowl by Glad that has kept my prepared salad for 4 days. Cheap bowls, and very air tight in refrigerator to store cooked items.
If they are in water and in the fridge, they will last maybe until Monday. But rinse them before using to remove the excess starch the leaches into the water.
About a week, but just remember that if you are going to do mashed potatoes to do them the first part of the week. They may absorb enough water to end up mushy, I'm not actually not sure about the mushythat's just what I heard somewhere. Also when you get them home from the store, scrub them up ahead of time so if you want a baked potato then it's all clean and ready to go.
