20 mins per pound and 20 mins over!

190 for about 45 mins, depends on how you like it cooked i suppose!

30 min @ 220 and 30min,a pound @ 180 and don't forget to let it rest ! ! yum yum

190 degrees for about one hour - if you use cooking film it comes out perfect every time.

I do them in the dutch oven covered on top of the stove. Add a little liquid and a quartered onion and other spices. Med to low temp, and let it cook until the meat starts to fall off. This could take a few hours, half way through near the end, add the veggies you want. Its good.

gas mark 4 for about 1 hr 45 mins, dont forget to turn it over half way through, enjoy,, also use the fat left on the tray to soak into the potatoes so you get the perfect roast potato, dont boil them, just peel and place onto the tray about 30 mins into beef cooking

normally i put it in for three hours and cover it with olive oil and molasses to bring out the flavour and the 23 people i cooked for said it was the best thing they ever tasted

Season your meat and place uncovered on a rack in a shallow roasting pan. Put enough beef stock into the bottom so the level of liquid is just below the bottom of the meat. Roast at 375°F for half an hour. Lower the heat to 225°F, roast for about 35-45 min per lb. Using a meat thermometer, it should reach 130 for rare, 150 medium or 160 for well (all temps. in degrees F).

Weigh the joint first, or look on the package for the weight.

For rare cook for 15 minutes per pound + 20 minutes

For medium, 20 mins per lb + 20 mins

For well done, 25 mins per lb +20 mins.

Start the joint in a hot oven, gas mark 8/230 deg C/450 deg F for 15 minutes. Then lower the heat to gas mark 4/190 deg C/375 deg F for the rest of cooking time.

If you've put the joint in the oven already without weighing it, stick the meat fork into the middle of the joint and count to 10. After 10, pull the fork out and touch it, if it's hot the meat is ready to eat.

Unlike poultry the juices from beef can be pink and still be safe.

Test it with a skewer. If blood comes out, it aint done.
