Here is my favorite recipe for chocolate chip cookies --gluten, dairy and egg free.

2 1/2 cups almond flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup agave
1/2 cup grapeseed oil
1 tablepsoon vanilla
1 cup dagoba chocodrops

1. In a large bowl, combine almond flour, salt and baking soda
2. In a smaller bowl, combine agave, grapeseed oil and vanilla
3. Stir wet ingredients into dry and add chocodrops
4. On a parchment lined baking sheet, form 1 inch balls and press to flatten
5. Bake at 350 for 7-10 minutes
6. Cool and serve

Most cakes or cookies contain one, two or all three of these. Any time you try to modify a recipe it'll be different especially since flour contributes a certain tenderness and structure to the finished product. While you might get away with substituting rice flour for wheat flour. If you then use apple sauce for the eggs and soy based products for the milk your chances of liking the finished product or having it taste anything like the product that contains all three items is slim. So I'd just find desserts & recipes that don't count on these ingredients. Poached pears dipped in chocolate with toasted almonds. Peanut butter thickened and sweetened with powdered sugar and dipped in chocolate. Fresh fruits. Or fruit baked with an oatmeal, brown sugar and margarine crumb topping. Rice noodle pudding with soy products such as Toffutti's sour cream and En-er G egg replacer. Try goggling some of the vegan sites for dessert recipes as they don't use eggs or dairy.
