hush puppies
vegetable oil for deep-frying
2 cups self-rising cornmeal mix
3 tablespoons self-rising flour
2 tablespoons finely chopped green onion
1 cup milk
1 egg, beaten
PREPARATION:
In a deep fryer or heavy, deep skillet, heat 2 to 3 inches of oil over medium heat to 375°. In a mixing bowl, combine cornmeal mix, flour, and onion. Add milk and egg; mix well. Let stand for 5 minutes.

Drop batter by tablespoons into hot oil. Fry until golden brown, turning several times. Drain on paper towels. Makes about 15 hush puppies.

Hushpuppies:
1 cup all-purpose flour
2 cups yellow cornmeal
1 egg
1 tablespoon sugar
1 teaspoon salt
4 green onions, chopped (stem and all)
Buttermilk
Peanut oil
Catfish:
2 cups yellow corn meal
1/4 cup all-purpose flour
2 tablespoons coarse black pepper
1 tablespoon lemon pepper
1 teaspoon paprika
Granulated garlic and salt
2 cups whole milk
Dash hot pepper sauce
4 Mississippi pond raised catfish fillets
Peanut oil


Hushpuppies: Mix first 6 ingredients in mixing bowl. Add buttermilk as needed until batter reaches a thick, mashed potato-like consistency. Refrigerate for 45 minutes to 1 hour before using. Heat peanut oil to 325 degrees F. Using 2 teaspoons to drop the batter, dip the first teaspoon into water and then fill with hushpuppy batter. Use the other teaspoon to rake the batter into the oil. Cook for approximately 4 minutes until golden brown. The hushpuppies should roll over in the oil by themselves. If they do not, you may have to turn them.
For the Catfish: Put first 6 ingredients into a large brown paper bag. Roll down the top and shake until well-mixed. Cut catfish in half lengthwise. Pat dry with paper towel. Mix milk and hot sauce. Dip catfish in milk bath, put in paper bag with breading and shake until covered. Place catfish into pot with about 4 inches of peanut oil heated to about 325 to 350 degrees F. Cook until brown and firm, about 6 to 7 minutes.

I use 1/2 cup cornmeal 1/2 cup flour Salt and Pepper
mix up in a bowl and dip in the catfish and lay in the hot oil.
Cook until firm when you push on the meaty part of the catfish.

I do the same as Toffy-but I add a tsp of cayenne pepper.

This is a standard recipe for hushpuppies. You can also add cayenne to them if you like spicy food...

1 1/2 cups cornmeal

1 small onion, chopped
1 cup buttermilk
1 egg, lightly beaten

Using a deep pot, preheat oil for frying to 350 degrees F.
Using a mixing bowl, stir together the cornmeal, flour, baking soda, and salt. Stir in the onion. In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter, 1 teaspoon at a time, into the oil. Dip the spoon in a glass of water after each hushpuppy is dropped in the oil. Fry until golden brown, turning the hushpuppies during the cooking process.

Cornmeal-Crusted Catfish
INGREDIENTS
1 egg, lightly beaten
2 tablespoons lemon juice
1/2 cup all-purpose flour
1/4 cup yellow cornmeal
1 teaspoon Cajun seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
4 (6 ounce) fillets catfish
3 tablespoons vegetable oil
DIRECTIONS
In a shallow bowl, combine the egg and lemon juice. In another shallow bowl, combine the flour, cornmeal, Cajun seasoning, garlic powder and salt. Dip catfish into egg mixture, then coat with cornmeal mixture.
In a large skillet, heat oil over medium heat. Fry fillets, two at a time, for 5-6 minutes on each side or until fish flakes easily with a fork.
Nutritional Analysis: 1 fillet equals 430 calories, 25 g fat (5 g saturated fat), 133 mg cholesterol, 568 mg sodium, 20 g carbohydrate, 1 g fiber, 30 g protein.

Mix some flour with the cornmeal. Make sure to season it (salt ,pepper, cayenne, it's very hot so be careful,paprika) If you wash and season the catfish (garlic powder, onion powder,salt) then let it marinate in buttermilk for at least 30 minutes before cooking. Wonderful!

Hush Puppies
1 ? cups yellow corn meal
l ? cup self-rising flour
? teaspoon salt
2 tablespoons sugar
2 teaspoon baking powder
? teaspoon black pepper
? teaspoon garlic powder

8 oz creamed corn
? finely chopped onion
one egg
4 tablespoons margarine


Mix corn meal, flour, salt, sugar, baking powder, pepper and garlic powder.

Then combine creamed corn, chopped onion, and egg; add to dry ingredients. Melt margarine and add to mixture.


Heat deep fat fryer to 375 degrees, dip 2 teaspoons in fat, then scoop large teaspoon of batter from bowl and using other spoon push batter off spoon into fryer. Dip spoons in hot oil again and repeat process. Turn hushpuppies over once when half browned. Fry other half and remove when browned, place in paper towel lined basket.

Makes 30-35 hushpuppies
