Hoppel Poppel!
3 medium potatoes, diced
1/4 cup cooking oil
1/4 cup onions, finely diced
1 cup ham, diced
6 eggs
1/2 cup swiss cheese
1 teaspoon salt
1/4 teaspoon pepper
1 dash worcestershire sauce
1 tablespoon parsley, chopped
--Melt butter in 11 inch frying pan and saute potatoes and onion until lightly browned. Add ham and saute 5-7 minutes longer. Beat eggs with worcestershire sauce, salt, and pepper. Pour egg mixture over potato mixture. Sprinkle with parsley and reduce heat. Lift the cooked eggs from the edge of the pan with spatula so that liquid can run down and cook. When omelet is nearly done, sprinkle with grated swiss cheese and place under broiler until cheese is melted.

Quiche is one of my favorite brunch foods! Spinach, broccoli, mushroom, and bacon are all great in quiche!

Honey French Toast
1/4 cup all-purpose flour
1 tablespoon sugar
1/8 teaspoon salt
1 cup milk
3 eggs, beaten
8-10 slices texas toast bread
3 tablespoons butter or margarine
warm honey
--Add flour, sugar, salt, milk, and eggs to a mixing bowl. Whisk until well blended. In a skillet over medium-high heat, melt butter; I start with 1 tablespoon and add to it as needed. Dip both sides of bread slice into egg mixture. Place 2-3 slices of bread in skillet (depends on how big your skillet is) and cook for 2-3 minutes on each side or until golden brown. Transfer to individual plates and drizzle with warm honey.

Mexican Omelette
3 eggs
2 tablespoons milk
1/2 teaspoon parsley (optional)
1 tablespoon vegetable oil
1/4 cup chopped green peppers
1/2 cup salsa, drained
1/2 cup shredded monterey jack cheese
--Combine first three ingredients in bowl and mix well. Heat up small skillet with oil over medium heat, add mixed ingredients. As the omelette cooks lift edges with spatula and mix centre so it is not too thick. When omelette is relatively solid add other ingredients and allow cheese to melt. Fold in half and serve.

Scottish kippers, boil in the bag are fine from Tesco, with a poached egg and brown bread and butter.
Must be Scottish though.

I love crepes when I have the time to make them. Just fold them over and make a nice sauce for them using butter and orange juice and zest. Or forget the sauce and fill them with cheese..turn them into blintzes. Serve with warm blueberry compote. (A HUGE shortcut is to buy the frozen ones in the box..they're really good too)
Do something different with your eggs..Spanish omelette, maybe? Or scramble them and add some goat cheese and chives. Ham steak with grilled pineapple...it's Sunday brunch..Go for the gusto!

Sometimes we have pizza bagels. This is the South, so tamales are favorites, too. Waffles, migas ( scrambled eggs with chilis, pico, corn tortillas, topped with red or green salsa or queso, served with black beans)

Quiche....either whole pies or mini (appetizer size) and they are so versatile because you could use as many different combinations of ingredients as you prefer: eggs (or egg substitute), cheeses (cheddar, monterey jack, pepper jack, swiss, feta, ricotta, gruyere, etc.), meats (ham, sausage, bacon), fish (salmon, shrimp), veggies (mushrooms, zucchini, asparagus, broccoli, onions, leeks, chives, etc), many different spices......use a frozen pie shell in it's own tin, refrigerated roll out pie crust, or your own.....there are quite a few websites for recipes and this one has several:
