Can I substitute a different type of chip in this mousse recipe?!

Question: 1c (6oz) semisweet chocolate chips
3Tbsp butter, cut into pieces
2tsp instant coffee
1Tbsp hot water
2tsp vanilla extract
1/2 c heavy whipping cream
Dissolve coffee in hot water, set aside. In medium bowl microwave chocolate and butter on High 30 seconds. Stir - if chips retain shape continue microwaving at 10-15 second intervals until completely melted.
Stir coffee and vanilla into chocolate mixture, then cool to room temperature.
Whip cream until stiff peaks form; fold into cooled chocolate mixture until just combined.
Spoon into serving dishes and refrigerate until set, about 1 hour. Garnish as desired.

I was wondering if anyone out there was experienced with this kind of recipe and could tell me if I could substitute butterscotch chips for the chocolate with a similarly tasty result?

butterscotch doesn't do to well in a microwave the high heat generated tends to burn it, although you can still use it if you watch it very carefully. You don't have to use milk or dark chocolate chips you could use white chocolate. Not marshmallows as the 6oz. required would give you a greater yield than you need and tends to go a bit chewy

or peanut butter chips? marshmallow bits? or eliminate the chips altogether?...

You sure can....Use your favorite.

Yeah! What ever chip you want!

l think you can, but it won't taste like butterscotch, if thats what your after l would omit the coffee and water, also you may want to try it with dark choco. instead or white choco. without the coffee, sounds YUM!!!
