What is the differences between pure molasses and dark molasses?!


Question: i'm making a fruitcake and the recipe asks for dark molasses , but i only have pure molasses? Is there a difference of taste? Is it ok if i use pure molasses instead of dark?

I am a former chef and hate to be a pain, but molasses is molasses, sorry girls, there is unsulfured with has a lighter aftertaste, but if it is molasses it is the same taste and colour no matter what.

Anyone will do, molasses like honey keeps the cake moist for a long time, as the hydrate the other ingredients, I use them for Xmas cakes, Xmas pudding, in gingerbread cakes and cookies and when I worked in Jamaica we had a Jamaican Fruit cake with it and we soaked them in 100 proof rum for extra kick.

It is fine to used what you have. The darker the molasses the sharper the taste.

Pure molasses is sweeter, it doesn't have the sugar extracted. It will be fine to use, it just won't have as much bitterness.
