Here are some of my favorites:
Rice and Beans and Sausage
3 celery ribs, chopped
1 onion, chopped
4 garlic cloves, minced
1 3/4 cups V8 juice (or tomato juice)
2 16 oz. cans kidney beans, drained
3/4 tsp dried oregano
3/4 tsp. dried thyme
1/2-3/4 tsp. red pepper flakes (less if you don't like spicy)
1/2 tsp pepper
2 lb. fully cooked smoked kielbasa cut into 1/4 inch slices.
4 cups cooked rice
Combine all ingredients except rice in slow cooker. Cover. Cook on low 4-6 hours. Serve over rice. Yummy!!

BBQ Ribs
Country Style Ribs
Onion
Bottled BBQ Sauce (any kind you like)
Sear ribs on all sides to seal in juices. Place in crock pot. Cover with sliced onions and BBQ sauce. Cook on low 8-10 hours. Yummy!!!
Serve with baked beans, cornbread…and this salad is great:
Caesar Coleslaw
1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing
Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!
CROCK POT ENCHILADAS
1 lb. hamburger
1 onion, chopped
1 sm. can chilies
1 sm. can mild enchilada sauce
1 can golden mushroom soup, undiluted
1 can cheddar cheese soup, undiluted
1 can cream of mushroom soup, undiluted
1 can cream of celery soup, undiluted
1 lg. pkg. Dorito chips
Brown hamburger and chopped onion, pour off grease. Put all ingredients in crock pot except Dorito chips. Mix and cook low 4 to 6 hours. Last 15 minutes before you are ready to eat, add Dorito chips and stir.
Swiss Steak
1 round steak
2 cans stewed tomatoes
Egg noodles, cooked.
Sear the steak on both sides.
Put in crock pot and sprinkle with a good seasoned salt.
Add the two cans of tomatoes.
Cook all day (8 hours or so).
Serve over cooked and buttered egg noodles.
Yummy!
Savory beef stew
2-3 # chuck roast, cubed & trimmed (or beef stew meat).
3 carrots, peeled & cut in chunks
4 potatoes, peeled & in chunks
1-48 oz can tomato juice
1 envelope onion soup mix
Mix all together & cook on low for 10 hours. If desired, thicken with a flour paste and/or add a drained can of peas before serving. My kids LOVED this meal!
Taco soup!
brown 1 pound of ground round (or turkey)
add taco seasoning packet as you would for tacos.
use 1 large jar of great northern beans (rinsed and drained)
2 small cans of diced tomatoes
cut up onion and green pepper optional
add water to desired soup consistancy (your choice...thick like stew or thin like soup!)
put everything in the crockpot and let it sit on high for an hour or two. Then put it on low til you are ready to eat. Dish up and top with shredded cheese and use tortilla chips to scoop or a spoon to eat with!
Old-Fashioned Beef Stew - Stove top or crock pot
Prep: 20 minutes
Cook: 1-1/2 hours
Ingredients
2 tablespoons all-purpose flour
12 ounces beef stew meat, cut into 3/4-inch cubes
2 tablespoons cooking oil
3 cups vegetable juice
1 cup water
1 medium onion, cut into thin wedges
1 tablespoon Worcesershire sauce
1-1/2 teaspoons instant beef bouillon granules
1 teaspoon dried oregano, crushed
1/2 teaspoon dried marjoram, crushed
1/4 teaspoon black pepper
1 bay leaf
3 cups cubed potato (about 3 medium)
1-1/2 cups frozen cut green beans
1 cup frozen whole kernel corn
1 cup sliced carrot (2 medium)
Directions
1. Place flour in a plastic bag. Add meat cubes, a few at a time, shaking to coat. In a large saucepan or Dutch oven brown meat in hot oil; drain fat. Stir in vegetable juice, water, onion, Worcestershire sauce, bouillon granules, oregano, marjoram, pepper, and bay leaf. Bring to boiling; reduce heat. Simmer, covered, for 1 to 1 1/4 hours or until meat is nearly tender.
2. Stir in potato, green beans, corn, and carrot. Return to boiling; reduce heat. Simmer, covered, about 30 minutes more or until meat and vegetables are tender. Discard bay leaf.
3. Makes 5 servings (about 7 cups)
4. Slow-cooker directions: Prepare and brown meat as above. In a 3 1/2- or 4-quart slow cooker layer meat, onion, potatoes, green beans, corn, and carrot. Decrease vegetable juice to 2 cups. Combine vegetable juice, water, Worcestershire sauce, bouillon granules, oregano, marjoram, pepper, and bay leaf. Pour over meat and vegetables in slow cooker. Cover and cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours or until meat and vegetables are tender.

Ingredients
1 pound beef stew meat, cut into 3/4- to 1-inch cubes
12 ounces small potatoes, peeled and quartered (about 2 cups)
4 medium carrots, cut into 1/2-inch pieces (2 cups)
1 1- 3/4-ounce can condensed cream of potato soup
1/2 cup water
1 envelope (1/2 of a 2.2-ounce package) beefy onion soup mix
Directions
1. In a 3-1/2- or 4-quart slow cooker combine meat, potatoes, and carrots. In a bowl stir together condensed soup, water, and soup mix. Pour soup mixture over meat and vegetables in cooker.
2. Cover and cook on low-heat setting for 8 to 9 hours or on high-heat setting for 4 to 4-1/2 hours. Makes 4 main-dish sevings (6 cups).
