kneading the dough stretches and develops the proteins in the dough called gluten. If you do not knead the dough enough, these proteins do not get developed well enough, and can have adverse effects during the baking process

Likewise, kneading the dough too much with build up and then destroy the gluten protein, again, resulting in unwanted effects and lackluster baking.

It helps it to breathe and rise........
You should do this kneading 2-3 times for best results.
If too much or too little kneading takes place, then you take a chance on it not rising to its full potential to be a nice loaf of bread.....And of course I hope you added yeast! That is what makes it rise..good luck
