Rotis and Paranthas use the same basic dough - different techniques - same cooking utentil.

1. Dough - mix a little water in whole wheat flour and knead really really well - till you have a soft dough that's just a bit sticky. Add more water as required - carefully!

2. Put a flat pan or griddle on the fire and heat.

3. Spread some whole wheat flour on your work surface and using a rolling pin, roll a small ball of dough [after dusting it with dry whole wheat flour] into a thin round flat pastry. Should be around 4 - 5 inches in diameter and about 1.5mm thick.

4. Put the flat pastry on the pan, cook on one side, then on the other, till its light, splotched with light brown patches and cooked through. shouldn't be crisp

for paranthas, in step 3, after rolling it out, spread some oil on the pastry, fold it once, spread some more oil and fold it again, till its a quarter - now roll it out again. Do the whole thing again, then cook as in step 4, but with a spoon spread some oil on both surfaces, till you have a light, crispy/soft parantha.

roti n paratha dont need any gravy....they r same as bread.....n r made wid wheat flour...
