What to do with my chicken????!
Answers: last night i had roast chicken and have laods left over,any quick and EASY ideas of what to do with the rest of it
Sandwiches!....Try some lemon & tomato bud!......
Make a curry, or a stir fry or have with some chips and peas.

Chicken and Mushroom pie or you can make a Chicken curry. You could try a stir fry and use the cooked Chicken or even a Chicken salad.
I like to shred the chicken off the bone and make a hearty soup with some vegetable stock (you can use a cube) plus lots of fresh vegetable and a handful of rice or small sized pasta! Perfect for cold nights!
Make coronation chicken and fill a jacket potato will it.
1 tbsp vegetable oil
half onion or 2 shallot, finely diced
1 dsp curry powder
1 dsp tomato paste
180 ml white wine
salt and pepper
1 tsp sugar
1 bay leaf
200 g mayonnaise
200 g natural yoghurt
2 tbsp fresh apricot or mango puree or apricot conserve or sweet mango chutney
100 ml whipping cream
Heat the oil in a fry pan and cook the onion gently for 3 minutes. Add the curry powder and cook for 2 minutes. Add the tomato paste, wine, salt, pepper, sugar, and bay leaf and bring to the boil. Allow to boil for 2 minutes, then simmer, uncovered, for 5 minutes. Strain and cool.
Combine the mayonnaise, yoghurt and apricot puree or conserve in a bowl. Beat in around 100ml of the cooled liquid a spoonful at a time. Beat the cream until thickened, and gently fold through the sauce. Add cooked chicken and mix well.
Curry or you could make chicken fajitas

Chicken and Dumplings
1 1/2 cups milk
1 cup frozen green peas and carrots
1 cup cut-up cooked chicken
1 can (10 3/4 ounces) condensed cream of chicken or mushroom soup
1 cup Original Bisquick? mix
1/3 cup milk
Paprika, if desired
1. Heat 1 1/2 cups milk, the peas and carrots, chicken and soup to boiling in 3-quart saucepan, stirring frequently.
2. Stir Bisquick mix and 1/3 cup milk until soft dough forms. Drop dough by 8 spoonfuls onto chicken mixture (do not drop directly into liquid). Sprinkle with paprika.
3. Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer.
definately a curry, tasty, hot and filling if you want a meal, a sarnie if you want snacks.
You could make a curry, a pie, rissotto, sandwiches, stir-fry. I guess it depends on what you have in the fridge and cupboard :o)
If everything else fails give it to the CAT!
Make a white sauce add mushrooms and onion and serve on a bed of boiled rice.
Melt the onions in a little marge or butter before adding mushrooms and chicken to heat through, then stir mixture into the white sauce.
I love having left over roasted chicken! I like to make chicken sandwiches on whole wheat, with lettuce, tomato and onion, I also like to cut it into chunks and add it to my salad.. another idea is to make a cream sauce, add chunks of the chicken and some mushrooms and serve it over pasta. You could always make a cold macaroni salad and add the chicken...or use it to make a stir fry.. the possibilities are endless. Have fun and good luck!!
For a quick and yummy chicken salad:
Tear or cut up all the meat into bite-size pieces and mix together with salad greens (also bite-size pieces) and, if you want, some chopped celery. Dress with a dressing made with mayonnaise mixed with a little water and some white wine, and then salt to taste. Good with a little poultry seasoning added, too. Toss until it is all well coated.
Another idea is to make a bechamel (cream sauce), add curry seasoning and salt to taste, add the bite-size chicken pieces to heat through, and then use as a topping for boiled rice. I do this with both chicken and turkey.

and some mayo
get some lettuce
and make chicken salad wraps
don't forget the salt & pepper
rip it up and add it to bbq sauce in a pan,warm it up add some monterey jack cheese(if you like that) and have a pulled chicken sandwich
Chicken tacos are wonderful. Just shred your chicken and use the meat just like the hamburger meat and go from there.

Easiest ever (my mum used to grab a rotisserie chicken on the way home when she really had nothing in the house and make this!):
Put shredded cooked chicken in the bottom of a fairly deep oven-proof dish, cover with a can of condensed chicken soup (you can stir it if you want, but hey you don't have to!), then put a lid of ready-made puff pastry on top. Press down the edges of the pastry (make it pretty by pressing a fork round the outside for those little lines), and cook in the oven as per the puff pastry instructions - most packs have a basic recipe on the back.

1 tablespoon butter
1/2 cup chopped onion
1/2 cup chopped celery
4 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can vegetable broth

1 1/2 cups egg noodles
1 cup sliced carrots
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
salt and pepper to taste
DIRECTIONS
In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.

2 cups cubed, cooked chicken meat
1/2 cup sliced carrots
1/2 cup sliced cucumber
1/4 cup sliced black olives
1/4 cup crumbled feta cheese
1/4 cup Italian-style salad dressing
DIRECTIONS
In a large bowl combine the chicken, carrots, cucumber, olives and cheese. Gently mix together. Add the salad dressing and mix well.
Cover and refrigerate. Let flavors marinate for at least 1 hour. Serve on a bed of lettuce if desired.

INGREDIENTS
1 (3 pound) roasted chicken
1 (15 ounce) can corn
1 (16 ounce) can sliced carrots, drained (optional)
1 (12 ounce) jar chicken gravy
1 (12 ounce) jar turkey gravy
3 cups prepared stuffing
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Shred or tear the chicken into bite size pieces. Try to get most off the whole chicken as possible, or as much as you think you can handle.
Place torn chicken in a 9x13 inch baking dish. Mix corn and carrots around with the chicken, then pour chicken gravy and turkey gravy on top and mix. Sprinkle stuffing over top to cover..
Bake at 400 degrees F (200 degrees C) for about 30 minutes, or until golden brown.
cut up lots of different veggies, sweat them off, add herbs, salt and pepper etc then add chicken and some stock (not too much) at the juice of lemon, then either using cream, elmlea or better creme fraiche to thicken the sauce and add to pasta or rice for comfort food.
Or do sandwiches or put the chicken in omelletes. But either way, make sure that you reheat it to boiling point for several minutes in order to killl off any bacteria lurking in there. Re:heat only once.
easy but delicious chicken & dumplins
1 5 lb whole chicken boiled , deboned and shredded
6 cans biscuits
1 family size can cream of chicken soup
1 family size can cream of mushroom soup
1 large container chicken broth
salt
pepper
garlic powder
ground red pepper (optional)
pour the soups and broth in a large pot, stir in spices.
add cooked chicken and bring to a boil.
tear biscuits in bite sized pieces and stir into pot.
once all biscuits are added simmer, stirring frequently, about 20-30 minutes or until firm

lemon chicken
Ingredients :
500g chicken
3 teaspoon peanut oil
1 onion, sliced
2 cloves garlic
1/2 teaspoon sliced ginger
Juice and zest of 2 lemons
2 tablespoon soy sauce
1 bouquet garni, or tablespoon mixed herbs
1 pincf cinnamon
1 pinch powdered ginger
Salt & pepper
Recipe :
Dice the meat.
heat the oil in a casserole dish and brown the onion, garlic and ginger for 3 or 4 minutes.
Add the meat and sauté for a further 2 minutes or until golden.
Add lemon juice, soy sauce and 150ml water.
Add the bouquet garni or mixed herbs, cinnamon, powdered and sliced ginger and lemon zest.
Season and simmer for 45 minutes over low heat.
