CHOCOLATE CAKE
coffee 11 fl.oz.
salt ? tsp
sugar 1 Tbsp
semisweet chocolate chips 2 cups
flour 3?cups
yeast 1 tsp

Cool the coffee to room temperature. This doesn't have the traditional shape of a cake, but it has the texture and taste. There's lots of oil in the chocolate - no additional is needed. The chips melt during baking.

LEMON BREAD
lemon 1
juice+water 11 fl.oz.
mace pinch
salt ? tsp
sugar 3 Tbsp
olive oil 2 Tbsp
flour 4 cups
yeast 1 tsp

Grate the rind from the lemon, squeeze the juice and top it up with water. Two tangerines, or a large orange, also work well, with the sugar reduced to 2 Tbsp. Don't try to save work by putting the whole fruit into a blender - the white part of the rind deadens the flavour. Use two oranges and replace the mace by 1 Tbsp sage to make a wonderful bread for stuffing.

I use my bread maker quite often. I follow the recipes of 2 books I have at home, but I search the net too.

Here are some of my favorites recipes:

Cinnamon Buns
1 cup water
2 teaspoon skim milk powder
1 egg, beaten
2 tbsp butter
3 teaspoon sugar
1 1/4 teaspoon salt
3 1/2 cup white flour
1 teaspoon yeast

Process dough, use 1/3 for a mini white loaf of bread. For Cinnamon buns, I roll rest of dough to about 1/2 inch, spread a thick layer of butter, and brown sugar over it, raisins/pecans optional. Sprinkle a good layer of cinnamon on top. Roll and slice into small Cinnamon buns. Place in a pan with more butter and sugar on bottom. Let it rise 45 minutes. Bake at 350F with bread for 20 minutes.

Pretzels
1 cup beer
1 tbsp butter
2 tablespoons sugar
1 teaspoon salt
2 2/3 cup white flour
3/4 teaspoon yeast

Process dough. Roll into a 14"x9" rectangle cut into 18 - 14"x1/2" strips. Gently roll each strip into a rope, Form into pretzels (curve ends of each rope to make a circle, cross ends at top, twist ends once and lay over bottom of circle). Place on greased baking sheets

DO NOT LET RISE!

Combine lightly beaten egg and 1 tablespoon water, brush on pretzels. Sprinkle with coarse salt or sesame seeds. (Or dip in butter and sprinkle with Cinnamon and sugar)

Bake at 350 for 18 - 20 minutes.

Milk and Honey Bread

This is an easy bread to make with your bread machine, and it's a wonderful bread for sandwiches and toast.
INGREDIENTS:
1 cup plus 1 tablespoon milk
3 tablespoons honey
3 tablespoons melted butter
3 cups bread flour
1 1/2 teaspoons salt
2 teaspoons active dry yeast
PREPARATION:
Add ingredients to the bread machine pan in the order recommended by your bread machine manufaturer.
Use basic and medium crust settings.
Makes 1 loaf.

This isn't "Awesome" but it's a great easy bread recipe from the King Arthur Flour website. I've almost never had a bad loaf from it.

Toast & Sandwich Bread
Ah, sandwiches... the centerpiece of any picnic. Here’s a moist, soft bread that’s perfect for anything from pb&j to smoked salmon and capers

2 teaspoons instant yeast
2 tablespoons sugar
1 cup lukewarm milk
1 1/2 teaspoons salt
3 cups King Arthur Unbleached All-Purpose Flour
2 tablespoons butter, melted

Bread Machine Method (1 1/2-lb. or larger machine): Place all of the ingredients into the pan of your bread machine, program the machine for Basic White Bread (or equivalent), and press Start.

Manual/Mixer/Food Processor Method: In a large mixing bowl, combine all of the ingredients and mix for 2 minutes. Switch to the dough hook, and knead for 10 minutes. By hand, knead till you have a smooth, soft dough. Using a processor, process for 90 seconds.

Transfer the dough to a lightly greased bowl, cover it, and allow it to rise about 1 hour, or till it’s doubled in bulk. Shape the dough into a loaf, and place it in a greased 8 1/2 x 4 1/2-inch loaf pan. Tent the dough with a proof cover or lightly greased plastic wrap, and allow it to rise for about 1 hour, or until it’s crowned 1 to 2 inches over the rim of the pan.

Bake the bread in a preheated 350°F oven for 35 to 40 minutes, or until it tests done (its internal temperature will read 190°F on an instant-read thermometer). Remove the bread from the pan to cool. Yield: 1 loaf, 12 slices.
