A GOOD recipe with Okra!!!?!


Question: I have to make something with Okra in it. I really like veggies, but I've never had Okra before, so I'm not too excited about making something with it. So I'm wondering if anyone has had anything with Okra that tasted really good, and preferably not a soup either.

Brunswick Stew
1 cup tomatoes, cut up (16 ounce)
1 cup tomato paste (6 ounce)
3 cups cooked chicken, chopped
1 package frozen okra
1 cup onions, chopped
1 bay leaf
1 teaspoon salt
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon pepper
1 dash ground cloves
2 1/2 cups chicken broth

In crockpot, stir together undrained tomatoes and tomato paste. Add chicken, frozen succotash or sliced okra, onion, bay leaf, salt, rosemary, pepper and cloves. Stir in chicken broth. Cover; cook on LOW for 5 to 6 hours.

Before serving, remove bay leaf and stir well.

Yield: 6 servings

Hank Williams Jr.'s Cajun Rice Casserole
1/2 pound bacon
1 large onion, chopped
1 teaspoon garlic salt
1 teaspoon onion salt
1/2 pound okra, trimmed and cut into small pieces
2 (16 ounce) cans tomatoes with juice
1 (10 ounce) can Ro*Tel tomatoes and green chiles
3 tablespoons dried parsley flakes
Salt and pepper to taste
Rice

Fry bacon in skillet and drain. Cool; crumble into small pieces. Set aside for serving.

Saute onions in bacon grease until golden. Add garlic salt, onion salt, okra, tomatoes, Ro*Tel , parsley flakes, salt and pepper. Mix well. Simmer uncovered 1 1/2 hours.

Meanwhile, prepare rice according to package directions. Serve cooked mixture over rice. Top with crumbled bacon.


Okra Louisiana

2 tablespoons bacon fat or oil
1 large onion, sliced into rings
1/2 green bell pepper, chopped
2 cups tomatoes
1 teaspoon salt
Dash of black pepper
1 teaspoon lemon juice or grated lemon rind
1 pound fresh okra, cut into 2-inch pieces
1/4 cup flour
2 tablespoons oil
1/2 cup grated cheese

Heat fat in medium skillet. Saute onion and green bell pepper. Add tomatoes, salt, pepper and lemon juice; simmer for 15 minutes.

In another skillet, heat oil. Dust okra with flour. Add to skillet and cook until heated, but not brown. Reduce heat. Pour sauce over okra. Add grated cheese; cover and simmer 15 minutes.

Makes 4 to 6 servings.

Smothered Okra

2 pounds fresh young okra
2 tablespoons vegetable oil
1 large onion, chopped
1 clove garlic, chopped
Salt and pepper
1 cup tomatoes, canned or fresh

Wash whole okra and dry thoroughly with paper towels. Slice into 1 /8- to 1/4-inch rounds. Saute in oil over medium heat until okra stops "stringing," stirring frequently. This could take 20 to 30 minutes. Do not let it brown. Add onion and garlic and saute until they soften. Add seasoning and tomatoes (and some juice too). Allow to simmer at least 10 minutes or longer.

Serves 6.

This is delicious, but it is fried. You can use fresh, fried or frozen. Coat the okra in raw egg and then cover it generously with cornmeal. Fry in vegetable oil until golden brown. Place cooked okra on paper towel to absorb extra oil. Salt and pepper to taste.

(cut okra into round circles or slanted long ovals.)

Okra With Shrimp
INGREDIENTS:
1 pound okra, trimmed, washed, sliced
3 tablespoons olive oil
3 tablespoons butter
1 medium onion, coarsely chopped
1 green bell pepper; seeded and coarsely chopped
4 large tomatoes; peeled, seeded and chopped
1/2 cup dry white wine
2 tablespoons lemon juice
1 tablespoon fresh parsley, chopped
salt
black pepper
1 to 1 1/2 pounds shrimp; peeled and deveined
hot cooked rice
PREPARATION:
Heat the oil and butter in a large skillet until the butter is melted. Add the onion and bell pepper; toss to coat evenly. Stir in the okra and cook over medium heat until the onion is translucent. Add the tomatoes, wine, lemon juice, parsley, salt, and pepper. Simmer, stirring occasionally, until the tomatoes soften. Add the shrimp and continue cooking for 3 to 4 minutes, or until the shrimp turns pink and opaque.
Serve with hot cooked rice.

Okra with Tomatoes and Ginger

2 garlic cloves, chopped
1 (2 by 1 1/2-inch) piece peeled fresh ginger, chopped
2 tablespoons vegetable oil
3/4 to 1/4 teaspoon dried hot red pepper flakes
3 large tomatoes, cored and quartered
3/4 teaspoon salt
1/4 teaspoon black pepper
1 pound small fresh okra, untrimmed

Pulse garlic and ginger in a food processor until finely chopped and transfer to a 12-inch heavy skillet. Add oil and red pepper flakes, to taste, and cook over moderate heat, stirring, until fragrant, about 1 minute.
Pulse tomatoes with salt and black pepper in processor until coarsely chopped and stir into oil in skillet. Cook, uncovered, over moderate heat, stirring occasionally, 10 minutes. Stir in okra and simmer, covered, until just tender, about 5 to 10 minutes.
