Atsuete oil, what is it ?!
used to color food naturally in the Asian countries especially in the Philippines. kare-kare or oxtail stew with vegetable will not have its orange color when annato is not used
atsuete or annato is fruit which contains little red seeds. the color of the fruit is green when unripe and turns to red when it ripens, the fruit is similar in appearance to "rambutan".
the fruit is dried first under the sun until it turns to brown color then it is split open to collect the red colored seeds.
to make annato oil, heat vegetable oil and fry the seeds in it. remove the seeds after all the colors are already transfered to the oil, be careful not over-toast the seeds.

its what you get from atsuete seeds. it looks orangey, almost reddish even, and if you add it to Asian dishes you get really great oriental flavor!
I dunno where u are from, but I learnt this is a Phillipino herb....used for colouring mainly...
