Does anyone have a good broiled fish (flounder) recipe that isn't too hard and is light? Thanks!?!
Answers: Yeah, I would saute it in a 1-2 knobs of clarified butter (butter melted in a microwave and the white skimmed off), salt and pepper your flounder on both sides, in a high temp flame, saute for 2-3 min one side, then turn and saute for 1-2 min, should be nice and golden brown
Flounder is a very light and tender fish. Broiling it isn't a good idea. We used to catch the flounder in Puget Sound and my grandmother would lightly flour them and fry them gently in butter in a skillet just until it was golden.
That's the best way to cook them.
In one of the restaurants I worked in, we use crushed potato chips for the crust and then put some white wine in the dish we broiled in. There is a little oil in the potato chip crumbs, but not enough to make it very heavy. It's best to go light on the crumbs anyway since too much will not let heat get to the fish and they will burn before the fish is cooked. You can use the stale broken chips at the bottom of a bag and they will keep for a week if you have extra.
