Manicotti

1 (8 ounce) package manicotti
shells
4 cups shredded mozzarella cheese, divided
2 cups ricotta cheese
1 cup grated Parmesan cheese, divided
1 tablespoon minced garlic
1 egg
2 tablespoons dried basil
2 (26 ounce) jars pasta sauce


Bring a large pot of lightly salted water to a boil. Add manicotti and cook for 8 to 10 minutes or until al dente; drain.
Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking dish.
In a bowl, mix 3 cups mozzarella cheese, ricotta cheese, 1/2 cup Parmesan cheese, garlic, egg, and basil. Stuff cooked manicotti with the mixture. (I use a teaspoon, or freezer ziplock bag sealed with corner cut off to pipe into shells)
Spread about 2 cups pasta sauce over the bottom of the prepared baking dish. Arrange stuffed manicotti in the dish, and cover with remaining sauce. Sprinkle with remaining mozzarella cheese.
Bake 15 minutes in the preheated oven. Sprinkle with remaining Parmesan, and continue baking 10 minutes, until mozzarella is melted and bubbly.

MEATY STUFFED MANICOTTI

INGREDIENTS:

1 (8 ounce) package manicotti
1/2 lb hot Italian sausage or mild Italian sausage (3 links)
1/2 lb ground round
1 large egg
1/3 cup milk
1 slice white bread, cubed
1 cup shredded mozzarella cheese
1 (8 ounce) container small curd cottage cheese
1 tablespoon dried Italian seasoning
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 (16 ounce) jar pasta sauce with mushrooms, divided
1/4 cup parmesan cheese

PREPARATION:

Cook pasta according to package directions; rinse with cold water.
Drain.

Remove casings from sausage and discard.
Cook sausage and beef in a large skillet, stirring until meat crumbles and is no longer pink.
Drain.

Stir together egg and milk in a large bowl; add bread.

Stir in sausage mixture, mozzarella cheese and the next 5 ingredients.

Spoon into manicotti shells, arrange in a lightly greased 13x9-inch baking dish.

Pour 1/2 jar of spaghetti sauce over shells.
Bake, covered, at 350 degrees for 30 minutes.

Uncover and pour remaining 1/2 jar sauce over shells; sprinkle with Parmesan cheese.

Bake, uncovered, 10 more minutes.

Serve & enjoy

Chicken and Spinach Manicotti
Ingredients:
14 pc Manicotti pasta uncooked
3 1/2 cups of ricotta cheese
2 cups of shredded mozzarella cheese,divided
1/2 cup of Parmesan cheese,divided
2 eggs
3 cups chop chicken
1 cup chopped spinach(frozen form ,removed the water)
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp ground nutmeg
1 1/2 cups spaghetti sauce

Method:
Heat oven to 350 F.Cooking pasta according to package directions.I a large bowl,stir together ricotta cheese, 1/1/2 cups of mozzarella cheese,1/4 cup of Parmesan cheese, eggs,spinach and seasonings.Spoon about 1/3 cup cheese mixture into each pasta tube:,place in 13x9 baking pan.Pour spaghetti sauce over filled pasta:sprinkle with remaining mozzarella and Parmesan cheese.Cover with foil:bake 35 minutes or until hot and bubbly.
Note: I baked until hot and bubbly,the sauce dry out .So I add another 1 cup of spaghetti sauce before serving.It's depends,if you like your pasta more juicy ,add in more sauce.Next time I will just bake for 35 minutes not hot and bubbly..
