Can you stiffen egg whites in a blender instead of a mixer?!


Question: My mixer died and I want to make a lemon meringue pie. So I dont want to try blending them at the risk of wasting eggs.

NO you cannot.
Use hand whisk

You might could get them started in a blender, but you probably won't be able to get them to a medium-stiff peak like you want.

I'd suggest doing it the old-fashioned way: cold bowl, whisk, and elbow grease. Add a pinch of cream of tartar to help stabilize the eggs as you're whipping.

Use a whisk and a very clean bowl.
