What is a good dinner for Valentines day??!
I would like to maybe get them to bed early so we can have dinner alone. We cant afford to go out for Valentines day!
So I would like to make something special for dinner. He isnt into weird foods and doesnt like lamb, or any other off the wall animals LOL, and isnt a huge vege eater
He loves potatoes, beef, chicken, onions
I want to make something that taste wonderful, and not just the normal steak and potato dinner! So I am a little stuck!
Also I need to keep it on a budget! I need to keep it $30 and under! I do plan on having a nice white or blush wine with dinner. We dont drink red.

Easy Chicken Cordon Bleu
2 skinless, boneless chicken breast halves
1/8 teaspoon salt
1/8 teaspoon ground black pepper
3 slices Swiss cheese
2 slices cooked ham (can use deli ham)
1/4 cup seasoned bread crumbs
Preheat oven to 350 degrees. Coat a 9x13 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper.
Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast.
Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

Easy Twiced Baked Potatos
2 large baking potatoes
1/3 (16 ounce) container sour cream
1 tablespoon and 1 teaspoon shredded Cheddar cheese
1/4 cup butter
salt and pepper to taste
dash of garlic powder & paprika
1 slice American cheese
Preheat oven to 350 degrees.
Bake potatoes for 1 hour or until soft.
Cut enough of the skin off the top of each potato to be able to scoop the potato out of the skin and into a mixing bowl.
Add butter, sour cream, grated cheese and mix together well. Add salt and pepper, garlic & paprika to taste.
Fill the skins with the mix and top with 1/2 slice American cheese. Bake for 20 to 25 minutes just until heated through.

A prime rib for 2 , mashed potatoes with sour cream and chives, fried onions over the steak, 2 glasses of wine, and .........
buy boneless chicken breasts and fresh sliced mushrooms. What you do is dredge the breasts in flour and then sautee in butter for 4 minutes per side in a nice hot pan. That will make the meat brown but it won't be completely cooked yet. Remove them from the pan and then add some more butter to sautee your onion for a few minutes and then add the mushrooms. Also add a cup of chicken broth and bring to a boil. Add the chicken and turn the heat way down. Open your wine and add a cup to the mixture and let it cook for about 20 minutes, turning once or twice.
In another pan, cook some egg noodles to your taste and drain. Add some butter to the same pan and melt it then add the noodles back in. Let them fry a little in the butter and add 2 cups of creamy parmesan salad dressing and toss.
Serve it with a salad and the wine. For dessert, have a heart shaped cake from the bakery or make your own mix cake and get a heart shaped cake pan from Target or something.
For the kids, cut up the leftover chicken breast into small pieces and cook in butter then add it to a package of mac and cheese and some frozen peas. Mix together and serve with chocolate milk and heart shaped cookies or cupcakes with those candy hearts with "be mine" on them.
