Meatloaf: What do you add to yours? Not sure what to put into it!?!
Answers: Onions, season, egg....what else? Not big on bread crumb meatloaf...want to taste meat not bread...any suggestions?
i use 1 small to medium onion diced, garlic powder, onion powder, salt & pepper (all to taste) ...also use the meatloaf mix which is part ground pork, ground chuck & ground veal. then ketchup, oatmeal and eggs. I don't measure anything, but if I had to guess on the ketchup about 1/2 cup, oatmeal 1/2-3/4 cup (quick oats) and eggs I use 1-2 depending on how big of a meatloaf I am making. after mixing all of the above together and placing the loaf in the pan, i take another 1/2 cup and about 2 tablespoons of brown sugar and mix them togehter, then I put this on top of the meatloaf. it gets all carmelized on top when it bakes...yummmmy....i think i'm making meatloaf for dinner tonight now!!!

I also add oregano, basil, garlic powder and parmesan cheese about 1/8 to 1/4 cup for about 1 1/2 lb of meat
I cover mine with a large can of diced tomatoes, 1 small can tomatoe paste, sprinkle cheese on top, basil, oregano and garlic as well as a bay leaf....and bake in a roast pan
I serve with mashed potatoes, green salad and
corn, or green beans.....
My grandmother puts cashews and coconut in hers... Its okay

This is my meatloaf recipe and you don't even know that there are bread crumbs in it.
Meatloaf is one of my favorite dishes - served with mashed potatoes and whole green beans or steamed baby carrots.
Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand
Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.
If you don't like bread crumbs, then try Ritz crackers pulsed in the food processor, or hit them with a rolling pin through a zip lock bag. It's really necessary to add something like that, because it helps keep your loaf soft...or you'll end up with a meat brick. You won't taste the crumbs, but it will improve the texture of your meatloaf.
I always add egg, ketchup, a few dashes of Lea & Perrins, onions, grated carrots, ketchup and bacon over the top. (My mom always did it, and although it's still good without it, it adds a nice flavor)
i think the easiest, most standard recipe is, tomato paste, bread crumbs, lipton dry onion soup mix an salt & pepper and one egg (depending on the size of meatloaf), usually 1 egg per 2 lbs.
Mix it all together, shape in a loaf and bake at 400 and you have a happy little meat loaf! Enjoy!
but you really need a little bread crumb or croutons, just dont add too much if you dont want it too bready.
Meatloaf needs some kind of bread to hold it together. You can use about a cup of very fine, seasoned breadcrumbs or a sleeve of crushed cracker crumbs, onion, one egg, a little splash of milk, salt and pepper, Italian seasoning herbs, mix it VERY well so your crumbs are all moistened, shape into a loaf and bake on a foiled cookie sheet or press into a casserole dish. Bake at 350 degrees; After about 45 mins, drain the excess grease and top it with bottled barbeque sauce, gravy, or some other topper, then bake for about 25 mins more or until no pink is showing . I sometimes mix a little BBQ sauce, some ketchup, a squirt of vinegar and Worstershire sauce, brown sugar, and a few Tbsps of water. It makes a nice, sweet topping that compliments the meat very nicely! Good luck!

this was my mom's recipe. really yummy. easy too.
use 16 crushed soda crackers (can use a rolling pin and crush in a baggy) or bread crumbs, 1/4 teaspoon salt, 1/4 teaspoon pepper, 2 teaspoons onion powder, 1 teaspoon worcestershire sauce, 1/2 teaspoon garlic powder, 3/4 cup ketchup, 1/4 cup milk, 1 lb. ground beef or turkey.
mix everything together by kneading. put in loaf pan. cook at 350 degrees for 40 minutes. cover top with ketchup. then cook again for another 20 minutes.
I usually do

ketchup
worcestire sauce
salt & pepper
dry mustard powder
dehyrated onion
garlic
steak run (like McCormicks Grill mates)
and crumbled crackers or oatmeal. Yes Oatmeal and you would NEVER know its in there, and doesnt have the texture of bread crumbs.
Oh and by the way if you cook it in a pan, line the bottom of the pan with bread - any kind and it absorbs all the fats so the loaf isn't sitting in fatty juices. That is a Paula Deen trick and it works like a charm, and the meat loaf comes out perfect everytime!
I have a meatloaf recipe on my Cream of Wheat box that uses 1/2 cup for 2 lbs ground meat. I personally like bread crumbs-the Italian seasoned ones. Also, ketchup, dry mustard, minced onion, Worcestershire sauce, pepper and salt, egg. Sometimes I'll throw some grated chedder cheese in it. Pretty much whatever sounds good. Yum, now I want meatloaf for dinner.....
Other than the items you mentioned, you can add:
chopped green pepper
chopped celery
salt
pepper
ketsup to the mixture
I mix half ketsup with some tomato soup for a topping, spread over loaf and bake. If it is a bit sour for you, just add a little bit of honey until you get the taste you want.
I also add some oats to mine just to give it some consistency so I can shape it into a loaf, but you don't have to.
my mom's recipe:
meatloaf mix (lamb, ground beef and veal)
2-3 eggs
oregano
parsely
parmasean cheese
1/4 cup bread crumbs (give or take)
1/4 cup oats (as in oatmeal - give or take the 1/4 cup....it shapes the meatloaf)
a pinch of garlic powder
a pinch of garlic salt
covers with pasta sauce and cooks for 45 minutes at 350 F
I usually put ketchup, 2 eggs, onions, and some crackers that have been smashed to crumbs and some all purpose seasoning or salt and pepper.
