Does any one know how to make buckwheat pancakes?!


Question: I have the buckwheat flour mix and it says just mix with water, but they are YUCK!! that way. I've also tried adding eggs, but no luck.My father is driving me crazy to make some for him and he's 89 so he forgets from day to day that he has asked.

1/2 cup all-purpose flour
3/4 cup buckwheat flour
1 teaspoon baking powder
2 teaspoons sugar substitute
1 large egg, beaten slightly
1 cup water
1 tablespoon margarine, melted
1 teaspoon margarine, for cooking

Low Sodium Pancakes & Waffles
Blend flours, baking powder, and sugar substitute in bowl.
Mix in egg, water, and melted margarine.
Let batter stand for 10 minutes.
Melt 1 teaspoon margarine in a 10-in nonstick skillet over medium heat.
Drop batter by the tablespoonful onto hot skillet.
Allow pancakes to cook until bubbles form around the pancakes.
Thin remaining batter with additional water if necessary.
Turn pancakes over with a spatula.
Continue cooking until pancakes are done.
Place on heated dish and continue cooking until all the pancakes have been prepared.

Add a half cup of apple sauce to the pancake mix and they taste good.

Buckwheat Pancakes

(10 servings)

1 1/2 cup flour
1/2 cup buckwheat flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2 cups buttermilk
2 eggs -- lightly beaten
1/4 cup honey
1 tablespoon melted butter
Vegetable oil to coat griddle
1/2 cup toasted sunflower seeds
In a large mixing bowl, sift together flours, salt, baking soda and baking powder.

In another bowl, whisk together buttermilk, eggs, honey and butter.

Combine wet ingredients with dry and stir with wooden spoon to combine. Batter will be slightly lumpy.

Brush hot griddle with oil, then pour 1/4 cup batter (more for larger pancakes), onto griddle, leaving 1 inch between pancakes.

Immediately sprinkle each pancake with 1 tablespoon sunflower seeds. Cook one side of the pancake until bubbles begin to break on surface and underside is brown. Flip pancakes and brown other side.

Serve with whipped butter and warm maple syrup.

Blueberry Buckwheat Pancakes

3/4 cup buckwheat flour
3/4 cup whole-wheat pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
3/4 cup nonfat milk
1 tablespoon honey
2 large eggs
2 tablespoons canola oil
2 cups blueberries, divided
1/2 cup real maple syrup

In a large bowl whisk together the flours, baking powder, baking soda and salt. In another bowl, beat together the buttermilk, non-fat milk, honey, eggs, and oil. Stir the wet ingredients into the dry ingredients, mixing only enough to combine them. Stir in 1 cup of berries.
Preheat a large nonstick griddle or skillet over a medium flame. Ladle the batter onto the skillet with a 1/4-cup measure. Flip the pancake when it is golden brown on the bottom and bubbles are forming on top, about 1 1/2 minutes. Cook the other side until golden brown, about 1 1/2 minutes. Serve topped with more blueberries and the maple syrup.

1946 Apple Buckwheat Pancakes Recipe

2 cups of your favorite pancake mix
1/4 cup buckwheat pancake mix
1 1/4 cups water
1 Granny Smith apple, diced
Butter and maple syrup

Heat pan or griddle. Stir together pancake mixes and water and let stand for 5 minutes. Ladle about 3 ounces of batter on griddle and distribute apple over exposed side. Turn when bubbles start to break, taking care not to pat the pancakes. Cook until they spring back when touched. Serve with butter and your favorite maple syrup.
