Gumbo is one of those American melting pot foods influenced by African, American Indian and French cultures in the deep South. People have always used ingredients on hand to make the stew, that's why there's no set recipe besides celery, onion and peppers and a thickener served over rice.Chicken, seafood or sausage are usually the protein sources, but the old timers used wild game too. The thickener is usually a roux, okra or file powder (file added right before eating). Americans love Mardi Gras in New Orleans, and traditional food like Gumbo are now offered on restaurant menus all over the US.
