eggs lend to the elasticity and rise of the dough--the yolk and the white of the egg fill up all the air spaces as dough bakes so you won't have weird little dough bubbles and pockets and your dough won't have the consistency of dense bread. i think you'll be ok, the texture just might be like bread. you could try to add a little vegetable oil, like a tablespoon or 2, which would contribute more fat to the dough and help with the elasticity.

The egg binds the ingredients together (it's the glue) - you'll just have blobs - not cookies.

Use some apple sauce. The purpose of eggs in bread and pastries (including cookies) is to add richness to the product. Eliminating the egg is not a big deal. Some cookie recipes don't call for eggs.

Apple sauce is used instead of OIL..not eggs...
If the receipe calls for an egg, and you don't use one....your cookies are gonna be kinda "bleh"...
Go to an neighbor and borrow an egg (like in the"old" days)...
Next time...prepare better....

If you don't put eggs in your cookies that's called egg less cookies! Don't worry it will just taste delicous!

You can use mayo. It is essentially egg and oil. But eggs are important to your baking recipes

It will be a CRACKER
