I was ask to bring a Blacked Eyed Pea Salad to a family get-together and I want to make sure I have the best..!

BLACK EYED PEA SALAD
Salad:
4 cups black-eyed peas, cooked and drained
1 cup white onion, small dice
1 1/2 cups red pepper, medium dice
1 cup Kalamata olives, pitted and chopped
2 tablespoons fresh oregano, picked and chopped
1/2 cup flat leaf parsley, picked and chopped
Dressing:
1 1/2 cups extra virgin olive oil
1 lime, zested
2 limes, juiced
2 tablespoons garlic, chopped
1 tablespoon sugar
Salt and fresh ground pepper, to taste
Directions:
Combine the first 6 ingredients in a large bowl.
Mix dressing in a separate bowl and pour over salad. Adjust with salt and pepper, to taste.
Salad is best when made a day ahead.

Blacked Eyed Pea Salad
2 1/2 (15 1/2 ounce) cans black-eyed peas, rinsed and drained
2 1/2 celery ribs, chopped
5/8 finely chopped red onion
2 1/2 jalapeno peppers, seeded and finely chopped
7 5/8 teaspoons olive oil
7 5/8 teaspoons balsamic vinegar
7 5/8 teaspoons mayonnaise
5/8 teaspoon salt
1/3-1/2 teaspoon Tabasco sauce
2 1/2 medium roma tomatoes, diced
In a medium size bowl, combine the peas, celery, onion and jalapeno pepper.
In a small dish, whish together the oil, vinegar, mayonnaise, salt and Tabasco sauce.
Pour the dressing over the peas and mix well; cover and refrigerate until serving time.
Just before serving, add the diced tomato and stir to combine.
