German Pancakes

2 eggs
2 tablespoons white sugar
3 tablespoons all-purpose flour
3/4 cup milk

Place the eggs, sugar, flour and milk into the container of a blender. Process until smooth on low speed.
Heat a large skillet or griddle over medium heat. Pour batter about 1/4 cup at a time (or more for larger pancakes). Tilt pan to achieve a round shape. Heat until golden, then flip and brown on the other side. Serve immediately with syrup, or fresh berries and whipped cream

Were they very thin pancakes... maybe they were crepes

Hi,

The mini Pancakes your referring to are actually called 'Poffertjes' (Dutch - German). You can pick up the little pans they are made in at most kitcvhen stores for around $30 - $40 (I live in QLD, Australia and I've found them at Robin's Kitchen). The mix / batter is the same to norman pancake mix, it's the syrup and icing sugar that really make the difference.

They are actually called German Pancakes! My Mom used to make them all the time. Here are some recipes:

Good Luck and enjoy!

My German Mom made these, they are like crepes.
4 eggs
1 cup milk
1 cup flour
Optional-dash of salt-1/4 cup sugar
Mix till smooth. Pre heat skillet with small amount of oil. Pour into skillet and when edges turn brown, flip. Top with your favorite topping.
