Recipe help: No bean Chili Recipes?!


Question: I am looking to make chili this weekend and I need a recipe that calls for no beans in it. Also I don't have a slow cooker/crock pot. Any recipes will be greatly appreciated.

This was on Good Eats last night. You don't have to use a pressure cooker, you can use a Dutch oven it just takes longer then.

Pressure Cooker Chili

3 pounds stew meat (beef, pork, and/or lamb)
2 teaspoons peanut oil
1 1/2 teaspoons kosher salt
1 (12-ounce) bottle of beer, preferably a medium ale
1 (16-ounce) container salsa
30 tortilla chips
2 chipotle peppers canned in adobo sauce, chopped
1 tablespoon adobo sauce (from the chipotle peppers in adobo)
1 tablespoon tomato paste
1 tablespoon chili powder
1 teaspoon ground cumin

Place the meat in a large mixing bowl and toss with the peanut oil and salt. Set aside.

Heat a 6-quart heavy-bottomed pressure cooker over high heat until hot. Add the meat in 3 or 4 batches and brown on all sides, approximately 2 minutes per batch. Once each batch is browned, place the meat in a clean large bowl.

Once all of the meat is browned, add the beer to the cooker to deglaze the pot.
Scrape the browned bits from the bottom of the pot. Add the meat back to the pressure cooker along with the salsa, tortilla chips, chipotle peppers, adobo sauce, tomato paste, chili powder, and ground cumin and stir to combine. Lock the lid in place according to the manufacturer's instructions. When the steam begins to hiss out of the cooker, reduce the heat to low, just enough to maintain a very weak whistle. Cook for 25 minutes. Remove from the heat and carefully release the steam. Serve immediately.

Just use ground chuck/venison---stewed tomatoes (canned)--and a package of chili seasoning.
Brown meat...drain off fat....add tomatoes....and seasoning.....cook on low/medium for about 2 hours. Stir often.
Add grated cheese on top just before serving...Serve with soda crackers or cornbread.....Enjoy!!!

I cheat and use Caroll Shelby's chili mix. Just add 2 #s of ground beef and follow the directions on the package. No beans here either.

NO BEAN CHILI

3 lbs. top round (buy in roast), cut into 1/2 inch cubes
6 tbsp. vegetable oil
2 c. chopped onion
2 tbsp. finely chopped garlic
4 tbsp. chili powder
1 tsp. oregano
1 tsp. ground cumin
1 tsp. red pepper flakes
1 (6 oz.) can tomato paste
4 c. beef stock (can use bouillon cubes)
1 tsp. salt
Freshly ground pepper

Heat 4 tbsp. of oil - lightly brown meat. Cook onions and garlic in 2 tbsp. of oil. Add chili powder and other spices until well mixed. Add tomato paste, pour in beef stock. Add meat, salt and pepper.

Bring to a boil. Half cover pot. Turn heat to low and simmer 1 1/2 hours. Serve with warm flour tortillas and salad. Great reheated the next day.

If you have a chili recipe that you like, add extra meat, and leave out the beans. Or replace the beans with potatoes, or zucchini, or corn, or a mixture of veg that you like. I like corn, sliced olives, zuke, chopped green chile from a can.

I don't use a recipe for chili. I saute chili powder in a little oil, add some onions, garlic, and meat (any ground meat, or any cubed meat). Cook until onion is translucent. Meat does not have to be cooked thru. Then I add cans of chopped tomatoes, maybe some tomatoe sauce or paste, any other veg (beans, or above), and simmer at low heat until done. I season to taste with more chili pwder, if needed, salt, pepper, garlic powder, etc.

If you want to leave it for a couple of hours, put it into a covered airtight pot (must be air/water tight, ot it will dry out and ruin it) and put into a low oven (200-250') and leave it until done instead of simmering on stovetop.

1 pound ground beef
1 pound ground pork

saute in heavy dutchoven. add

1 clove crushed garlic
1 medium onion, minced
1 tablespoon oregano
salt to taste
1 8-ounce carton frozen Bueno or Hatch Red Chile Puree
1 carton water.

Simmer for 2 hours over very low heat, covered.

Ray's chili:

Heat deep non-stick pan on medium for 5 minutes WITHOUT OIL OR BUTTER;

Brown one lb of 70 to 75% beef (can be cooked without beef too);

Add half of a small onion chopped after meat's red-raw-look is gone;

Add 2 large cans Hormal chili without beans;

Ro-Tel, medium or mild found in the canned tomato section at the store;

1/8 to 1/2 teaspoon garlic powder if you have it. Chili is good without it;

Cook about 50 minutes on low or simmer.

one thing i would like to add. I buy a can of chipolte peppers in adobo sauce and add one or two.
give the chilli a great heat flavor. I use alot more chilli powder that most recipes call for. I just keep adding slowly until I can really taste the chilli powder.
other than that those are some good basic recipes, you dont need to buy it prepacked.

I made some chili last week that turned out great.
When I went to purchase my meat, the clerk suggested that I used two types of meat.
I used ground pork and ground bison (or you can used ground chuck).
I got a pound of each...but if you aren't using beans buy an extra pound of meat.

Brown the meat and drain the fat
Rather than water I used two cans of vegetable broth
2 cans of rotel tomatoes with green chilis (they are diced tomatoes)
! can of tomato paste
1 pack of chili mix which has cumin, salt, paprika, chili powder
I added the ground meat and cooked on a medium heat for about an hour then just simmer.
I served with crackers and french bread.
