Fennel, just bought some was going to roast some veg in oven and then make soup. will this roast well?!


Question: never seen fennel before , what do i do with it. what way do i prepare it can you only use the white bit or can you use the stalk. do you think it will go well with my soup. i am haveing mixed veg with roast red pepper turip. thanks in advance

i use it just like onion! since you making soup you can use it all! cut up the bulb in large pieces as well as the stalk and roast in the oven on a sheet pan at 350 for an hour. really brings out AWESOME flavor. toss with oil, salt and pepper before.

Cut the fennel bulb into eight wedges and roast with the rest of the vegetables you are roasting. The green fronds are. great to chop up and use as a garnish.
Fennel is also good raw, cutting the bulb in half, slice very thin and use as a component in salads.
