I've been making this for over 30 years - always gets raves!

Lasagna

Get a 2 to 3 jars of spaghetti sauce (Ragu, Prego...), two packages of lasagna noodles, 16 oz of mozzarella cheese, 16 ounces of ricotta cheese, 1 egg, and a pound of ground beef.

Prep:
Cook the lasagna noodles until they are done.
Get a 9 x 13 pan ready.
In a sauce pan fry the ground beef, drain and add the spaghetti sauce and heat.
Mix the egg in with the ricotta cheese, and a little salt and pepper.
Slice or grate the mozzarella cheese.

Assembly:
On the bottom of the pan, put a little of the spaghetti sauce, so the noodles don't stick (or spray with Pam). Then put a layer of the noodles, so you can't see the bottom. Put the length of the noodles going the same direction as the length of the pan. If you have any space at the bottom, put pieces of noodles in to plug the holes. Then put half of the ricotta cheese spread over the noodles, then half the mozzarella cheese, and pour half of the sauce over the cheese, then start over, noodles, ricotta, mozzarella, sauce. Sprinkle the top with Parmesan cheese and bake for 30 minutes at 350 degrees F or until bubbly. Let sit for 15 minutes before serving.

BEEF AND VEGETABLE LASAGNA

2 tbsp. olive oil
1 lb. lean ground beef
4 c. tomato sauce
4 tbsp. chopped parsley
3 1/2 c. low fat ricotta cheese
1 c. chopped, cooked spinach
1/4 c. grated Parmesan cheese
1 tbsp. dried oregano
3/4 tsp. ground nutmeg
Black pepper
8 lasagna noodles, cooked
3 c. grated low fat Mozzarella cheese

Preheat oven to 350 degrees. Heat olive oil in skillet over medium heat. Brown ground beef. Drain off oil. Place tomato sauce in saucepan. Add browned beef and 2 tablespoons parsley. Cook for 5 minutes. Remove from heat.
In a bowl mix ricotta cheese, chopped spinach, Parmesan cheese, remaining 2 tablespoons parsley, oregano, nutmeg and black pepper. Place 2 cups tomato and meat sauce in bottom of 9"x13" baking dish. Place 4 lasagna noodles on top. Place half of the ricotta mixture over lasagna. Sprinkle with 1 cup Mozzarella cheese. Repeat with a second layer of sauce, noodles, ricotta mixture and cheese. Top with remaining sauce and remaining 1 cup Mozzarella cheese.

Cover dish loosely with aluminum foil. Place on cookie sheet and bake 45 minutes. Remove foil and bake 20 minutes more. Remove from oven and let rest 10 to 15 minutes before serving. Serves 8.

I use the one off the side of noodle box, then kinda tweak it to my own taste for the day. Works really well.

i lb ground round
1 8 ounce bag italian blend shredded cheese
1 8 ounce bag mozz, shredded
2 jars spaghetti sauce
lasagna noodles, boiled, not rinsed
1 large can pieces of mushrooms
1 tablespoon each...garlic powder, onion powder, italian seasoning, parsley
as much minced garlic as you want
1 large onion diced
ricotta cheese, seasoned with salt and pepper and garlic powder, parsley and onion powder ....more than the origianl tbsp


boil the noodles, set aside

cook the meat, onions, garlic, spices until browned, drain

mix all the cheeses, meat mixture together

pour a cup in the bottom of a 9 x 13 pan, layer soem noodles, add a layer of mix, top with ricotta, repeat until all is used finishing with meat mix,

cover with foil and bake for 1 hour at 300.

ingridients:

1 lb ground beef
pepper
salt
onions
garlic powder
complete seasoning
lasagna noodles (enough for three layers)
spaghetti sauce(the ones used for meat balls)
ricota cheese
motzarella cheese(the one grated in a bag)

preheat oven to 345

cook the noodles
brown the meat.. no oil... add salt and pepper to taste... remove the liquid the meat releases..
chop the onions to taste and add them to
the meat, add a teaspoon or garlic powder, and complete seasoning to the meat... mix well... once thats done pour the spaghetti sauce on the meat...

butter the bottom of the lasagna tray.... so that the noodles wont stick..

addd your first layer of noodles.. it uualy takes three each layer.. add meat, not a lot, you're adding the meat to two layers then add ricota cheese on top just use a spoon. add a little bit of motzarella cheese on top, then do another layer with meat, ricota and motzarealla.. on the last layer of noodles add a lot of motzarella cheeze an bake for about 15 mins...

This recipe comes from an old cookbook I found years ago on clearance and I love it.

1/2 lb cooked lasagna noodles (I do the whole box and use what I need from it)
1lb ground beef
1/2 c chopped onions
1 6 oz. can tomato paste
1 clove garlic, minced
1 tsp oregano
1 1/2 c water
2 tsp salt
1/4 tsp pepper
1 lb cottage cheese
12 oz mozarella cheese (sliced or grated)
1/2 c parmesan cheese

Cook lasagna according to package. Brown beef adn add onion, cooking until onion is tender. Stir in tomato paste, garlic, oregano, water, salt, and pepper. Simmer for 30 min. In a lasagna pan, layer noodles, meat sauce, cottage cheese, and mozzarella. Repeat layers. Sprinkle with Parmesan cheese.
Bake at 375 for 30 mins. Let cool slightly. Serves 8-10.
