Food Desserts for Dad's Birthday?!

Answers: Hi Everybody, I want to make zucchini bread and that is going to happen cause I have the recipe and stuff . But after I make that, I wanted to make one more dessert that is delicious but not too complex. I was thinking about maybe a Key Lime Pie thats homemade, but I would used bought crust. Give me some delicious ideas and give me the recipe too, with good directions. I would honestly appreciate it, this is a big deal to me, I do not want easy everyday knowing desserts. ROCKY ROAD BROWNIES
12 ounces unsalted butter (3 sticks)
2 c dutch cocoa powder sifted
6 eggs
2 c sugar
2 c packed brown sugar
2 c flour
1 t kosher salt
marsh mellow, walnut/almond/pecan, chocolate candy bar chopped - all as desired
directions
preheat oven to 350F
line a 9-13 inch pan with foil or parchment paper and spray with non stick spray.
melt butter and add sugar, vanilla and eggs beat with spoon until blended add flour, cocoa powder and salt stir well. spread batter into pan and bake for 22 minutes and bring out layer brownie with marsh mellow mix bake until marsh mellow have soften. let cool in pan on wire rack. using wet knife, cut into squares.

Fresh Strawberry Pie
shortbread cookie pie crust
8 oz cream cheese, softened
1/2 cup sugar
1/2 tsp. almond extract (can used vanilla instead)
1 cup heavy cream
Strawberries, washed, caps removed
Beat cream cheese, sugar and extract until smooth. In a chilled bowl, whip cream until stiff peaks form - fold into cream cheese mixture.
Put into cookie crust. Top with whole strawberries, point end facing up, starting in the middle and working out to edges, covering the cream cheese layer. Refrigerate for up to 3 hours before serving. Serves 8.

Piccadilly's Lemon Ice Box Pie
Crust
1 Box Jiffy Mix Yellow Cake Mix (prepared as directed)
2 Tbs. Granulated Sugar
Filling
1 1/2 C. Sugar
5 Tbls. Flour
1/2 tsp. Salt
2 1/4 C. Whole Milk
3 Egg Yolks (beaten)
1/3 C. Lemon Juice
1/2 tsp. Vanilla
8 oz Whipped Topping (Cool Whip)
Crust Preparation:
Crumble cooled prepared cake and measure 2 cups of crumbs, pat crumbs lightly down when measuring. Place crumbs in small bowl and mix in the sugar. Spray a none stick spray in 9" pie pan and pat cake crumbs in pie pan along the sides and on the bottom. Place pie crust in a preheated oven at 275o for 7 minutes. Watch crust carefully so the crumbs will not scorch. This process will help to lightly set the crust. When done remove and cool crust.
Filling Preparation:
In a 2 quart sauce pan mix sugar, flour, salt and milk. While stirring constantly bring ingredients to a low boil and cook for two or three minutes until filling becomes thick. Remove pan from heat and add 1/2 cup of hot mixture to beaten egg yolks and whisk together. Place filling back on stove at a low heat and slowly pour egg yolks into filling while whisking together. Pour lemon juice and vanilla into filling and bring to a soft boil and cook for two to three minutes longer. Using a whisk through out the cooking helps to eliminate lumps. When filling is thick remove from heat and set aside to cool down. The filling may be poured into the crust while still a little warm but not hot
Place pie in refrigerator for several hours to set and chill completely.
When chilled, top with whipped topping and sprinkle the two tablespoons of crumbled cake crumbs.
Fresh lemon zest may be added to garnish.
Please note if you can not find Jiffy Cake mix, you can use a regular cake mix, but you will have twice as much crust than you need. So making two pies might be a solution.

Red, White and Blueberry Cheesecake Pie
Yield: 10 portions
8 sheets (about 13”x14” each) thawed phyllo dough
1/4 cup butter or margarine, melted
2 pkg cream cheese
1/2 cup sugar
1 tsp vanilla extract
2 eggs
2 cups fresh blueberries, divided
1/2 cup strawberry jelly
1 cup whipped cream or Cool Whip, optional
Preheat oven to 425oF.
For crust:
Grease a 9-inch pie plate; set aside.
On a flat surface place 1 sheet phyllo (keep remaining phyllo covered to prevent drying out); brush with butter. Top with another phyllo sheet; brush with butter. Repeat with remaining phyllo and butter to make 8 layers. Using kitchen scissors, cut layers into a 12 to 13-inch circle. Carefully press circle into prepared pie plate; gently fan edges. Bake until edges are just golden, 6 to 8 minutes; cool slightly on a wire rack. Reduce oven to 350oF.
For filling:
In a medium bowl with an electric mixer, beat cream cheese, sugar and vanilla until light and fluffy. Add eggs; beat until well combined. Fold in 1 cup of the blueberries.
Pour into prepared crust. To prevent over-browning of crust, gently cover with foil the last 25 minutes of baking. Bake until set, 40-50 min; cool completely on rack.
To serve: In a small bowl beat jelly until smooth; spread over cheese filling. Arrange remaining blueberries on top in star shape. Garnish with whipped cream, if desired.
Make a double decker chocolate cake. You can use cake mix and no one will tell the difference, just be sure to make your own frosting because the storebought stuff tastes ICK.
Cake :Almond Banana.
450g Ripe Bananas, mashed.
50g Almonds, chopped.
50ml Oil.
50ml Unsweetened Natural Yoghurt.
100g Sultanas/Raisins.
3/4C Oat Bran.
3/4C Wholemeal Flour.
1/2C White Flour.
1 +?t Baking Powder.
1/2t Almond Essence.
?-1/2C Reduced Fat Milk.

Mix first 4 ingredients together

Place sultanas/raisins, oat bran and wholemeal flour in a bowl, then sift in white flour and baking powder.

Add the dry mix to the wet. Add almond essence and mix well. Add enough milk to form a smooth cake batter.
(IV)
Pour into a lined cake tin and bake for about an hour at 150C.
