Want to make a garlic butter sauce for fish?!


Question: I want to buy some halibut steaks, or maybe tilapia, but not sure how to season them. I have onions and spices. I saw a garlic butter recipe that's basically garlic cloves, butter, onion, and salt and pepper, but I don't really want to mess with garlic. It's so stinky. Can I use onion, butter, maybe a little Mrs. Dash and some garlic salt? I don't want anything too salty. Would that combo work, or any other ideas? Also, I usually bake fish, but it's often too dry. I've never used the broil setting. How does this work? How often would I broil? Do I need to both broil and bake it?

You're on the right track. To melted butter, add garlic powder, salt, and pepper, maybe a little lemon zest (rind of lemon, no white pith). It would taste great on fish!

I'd bake your fish, not broil, at a pretty high temp, like 425oF or so. Depending upon fish thickness, it shouldn't take over 10 mn. or so. Remove as soon as flesh is no longer "clear" but opaque. Broiling makes such a mess and smokes up the house, and is utually to cook only the outiside of whatever food is under it. Fine for steaks, NOT for fish!

Honestly, I would use this recipe for your Halibut. It sounds spectacular!

I cook fish too but I dont eeven now wat broil is I fel dumb but I put my fish in foil with onoin,rosamary n lemon. I put it in the pan or bbq untill its flaky. But I make my garlic sauce with garlic, butter n splash cream, if u dont like the garlic storng cook the garlic in pan for a while the longer it will take the strong garlic taste away or I guess u could use onion instead of garlic I suate my onion with butter n brown suger.

IF YOU WANT GOOD GOOD FISH FRY IT FOR LIKE 10 MINS AND THEN FRY IT WITH BBQ AND THEN PUT GARLIC JUICE AND THEN IT WILL MELT IN YOUR MOUTH.

Garlic powder works wonders. If you want something stronger, they sell crushed garlic paste. It comes in a jar and it works great because you don't really have to mess with it and you can add it to taste.

don't broil fish, if u have a skillet use that and for seasoning get butter from the fridge and some lemon juice (does not have to be fresh squeezed) don't put to much, just a teaspoon and a half or to your desire then put it in the microwave for 30sec. or until butter is melted then baste the fish or use it for dip

1/3 cup butter or margarine, softened
1 garlic clove, finely chopped or 1/4 teaspoon garlic powder

the reason it is so dry is you are baking it too long. I season fish with lemon pepper only, bake covered for 20 min. when done, pour your garlic butter on and enjoy!!
