Stuff your turnovers with this savory filling or make a rustic phyllo tart with the the following recipe - for a pie or tart, you can add more apples to this recipe very easily and still keep the savory taste.

3 tablespoons butter
4 fully cooked sausages (13 ounces total) or chicken if that is what you have in the house ;-)
1 medium onion, sliced
1 medium-size apple, peeled, cored, sliced
1 cup apple cider or apple juice
2 tablespoons chopped fresh sage
2 tablespoons fresh lemon juice

Melt 1 tablespoon butter in large skillet over medium heat. Add sausages and cook until beginning to brown, turning occasionally, about 5 minutes. Add onion and apple to sausages in pan; cook until onion and apple are tender and brown, stirring often, about 5 minutes. Add apple cider and chopped sage; increase heat to high and stir until liquid is slightly reduced, about 2 minutes. Stir in lemon juice. Season to taste with salt and pepper. Using slotted spoon, transfer onion and apple to 2 plates, dividing equally. Top with sausages. Whisk remaining 2 tablespoons butter into cider mixture. Season sauce to taste with salt and pepper. Drizzle over sausages and add to phyllo crust.

Bake at 375 until phyllo is golden - temp will depend on how you are using this recipe.

OR

Make a the above as a casserole - when using chicken instead of sausage, you can double chicken amount and use up to apples. Adjust your seasonings to taste. That is alot of apples to use in one recipe.

Make a traditional apple pie for desert with the phyllo dough and the casserole for a dinner - that will use the majority of your apples - then you'll have sweet and savory!

Buono Appetito!

Slice the apples, fold over the sides of the pastry to make a crust edge. Lay the sliced apples on the pastry (in a pattern or just pile them on there) and sprinkle with at least 1/4 cup sugar. Maybe sprinkle on some cinnamon, nutmeg and/or cloves or allspice, squeeze some lemon juice on top and dot on some butter. Bake it at 350 until the crust gets browned. YUM!!

Apple Chicken Stuffing....

I know this may sound like a side, but it is definitely filling enough to have as a main dish.

1 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped apples (unpeeled)
1 1/2 cups natural applesauce
1 (8 ounce) package seasoned stuffing mix
1 cup chicken broth
1 1/2 teaspoon thyme
1 teaspoon ground sage
1/2 teaspoon salt
1/2 teaspoon black pepper

Spray medium nonstick skillet with nonstick cooking spray. Heat over medium heat until hot.

Add the chopped onion and celery; cook and stir about 5 minutes or until transparent.

Add apple and pieces of chicken cook and stir about 3 minutes or until golden.

Transfer to a large bowl. Add apple sauce, stuffing mix, broth, thyme, sage, salt and pepper; mix well.

Place stuffing in a greased 8" pan. Cover with foil and bake at 350 degrees for 20 minutes or until heated through.

( I know this didn't include your puff pastry... but you could easily serve the stuffing on top or inside the pastry)
