How can I keep this 'fresh'?!
Here's what im going to make
Baked French Toast
2 large egg(s)
1/2 cup fat-free skim milk
2 tsp powdered sugar
1/2 tsp vanilla extract
1/4 tsp ground cinnamon
4 slice whole-wheat bread, thick
1 Tbsp unsalted butter, cut into small pieces
Preheat oven to 425°F (220oC). Coat a baking sheet with cooking spray.
Lightly beat eggs with a fork in a shallow bowl. Whisk in milk, sugar, vanilla, and cinnamon.
Soak bread in egg mixture, then transfer to baking sheet. Sprinkle with butter and bake until golden, 8 to 10 minutes
Now once it's done how do i keep it fresh until morning ...i don't want it drying out.
Answers: I'd like to start preparing my breakfast at night before bed.

This is a easy question as I do it all the time Cook it all the night before ,let it cool ,wrap it in cling film Put in the fridge ,in the morning put it in the micro nuke for 2 mins & Hey Presto hot & ready

Try preparing it the night before, but do not bake it. Cover it tightly in foil and refrigerate overnight. Then bake in the morning.
if I were you I would just make the egg mixture ahead of time and keep it in the fridg. really you cant spare 1 min to dip the bread in the mixture in the morning?
Follow all the steps and soak the bread (in the baking dish) at night, cover with plastic wrap and keep it in the refrigerator. Since it only takes 8-10minutes to bake, do the baking part in the morning while you get ready :)
Since you are trying to save time, I would suggest that you fry your French toast in a non-stick frying pan
Then in the morning heat them in the oven.
