Buy a cook book and keep it hiden from your b/f and cook up a lush meal every once in a while it will surprise him

I just made this recipe and substituted cherry tomatoes as a healthier alternative to the eggs and you couldn't really tell that the eggs are missing from the great taste.. I am HOOKED on this recipe!!

Classic Potato Salad

Prep: 40 minutes
Chill: 6 to 24 hours

Ingredients
2 pounds potatoes (6 medium)
1/4 teaspoon salt
1-1/4 cups mayonnaise or salad dressing or Nayonnaise
1 tablespoon yellow mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup thinly sliced celery (2 stalks)
1/3 cup chopped onion (1 small)
1/2 cup chopped sweet or dill pickles or sweet or dill pickle relish - I prefer the sweet
6 Hard-Cooked Eggs, coarsely chopped (or can substitute cherry tomatoes)
Lettuce leaves (optional)
Paprika (optional)

Directions
1. In a medium saucepan place potatoes, the 1/4 teaspoon salt, and enough water to cover. Bring to boiling; reduce heat. Simmer, covered, for 20 to 25 minutes or until just tender. Drain well; cool slightly. Peel and cube the potatoes.

2. Meanwhile, for dressing, in a large bowl combine mayonnaise, mustard, the 1/2 teaspoon salt, and the pepper.

3. Stir in the celery, onion, and pickles. Add the potatoes and eggs. Toss lightly to coat. Cover and chill for 6 to 24 hours.

4. To serve, if desired, line a salad bowl with lettuce leaves. Transfer the potato salad to the bowl. If desired, sprinkle with paprika.

5. Makes 12 side-dish servings

Cheats Chicken Curry

Using a ready cooked chicken bought from the supermarket all you do is make the sauce.

One onion
2 stalks of celery
3 - 4 medium carrots
1 carton tomato passata
mixed herbs/ 2 -3 cloves garlic(crushed)
chilli powder
curry powder
salt & pepper
2 Tablespoons oil

Chop the veg and fry in oil until soft and transluscent - add herbs and spices to taste.

Break up the cooked chicken into small pieces and add to the veg and spices

Add the tomatoe passata and a little water if necessary.

Leave this on a medium heat to simmer for about 20 minutes.

Cook your rice

and serve.

Try this it is quite easy and really tasty:

Sweet `n Sour Chicken:

4 chicken joints, freshly cooked
4 tablespoons vinegar
3 oz Demerara sugar or granulated
1 tablespoon tomato puree
2 tablespoons soy sauce
quarter of a pint of pineapple juice
half a pint of water
1 medium sized onion, cut in quarters through the core
1 green pepper, cut in 1 inch squares
4-6 oz chopped pineapple
1 tablespoon cornflour
4 tomatoes, quartered
salt and pepper


Blend together the vinegar, sugar, tomato puree, soy sauce, pineapple juice and about three quarters of the water. Add the onion, green pepper and pineapple and bring to the boil. Blend the cornflour with the remaining water, pour some of the boiling sauce on to the cornflour mixture and return this to the saucepan. Return to the boil, stirring and allow to cool for about half a minute. Add the tomatoes and seasoning, if necessary. Pour the sauce over the hot chicken and keep warm for five minutes so that it can soak into the meat. If making the dish in advance, do not add the tomatoes until the sauce goes on the meat five minutes before serving.

Serves 4

LEVEL TABLESPOONS;

Demerara 3 = 1 oz
Granulated 2 = 1oz
Pineapple 4-6 oz = 100-150g


Serve either with plain rice or Pilau Rice. You can buy Uncle Ben`s microwave bags now. Ready in 2-3 minutes.

blt egg bake

What you need:
1/4 cup mayonnaise
5 slices bread, toasted
4 slices process American cheese
12 bacon strips, cooked and crumbled
4 eggs
1 medium tomato, halved and sliced
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded cheddar cheese
2 green onions, thinly sliced
shredded lettuce

What you do:

Spread mayonnaise on one side of each slice
of toast and cut into small pieces. Arrange the toast, mayonnaise side up, in a greased 8 inch square baking dish. Top with cheese slices and bacon.

In a skillet, fry the eggs over medium heat until completely set; place over the bacon. Top with the toast slices and set aside.

In a saucepan, melt the butter. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring this to a boil; cook and stir for 2 minutes or until thick. Pour over tomato. Sprinkle with cheddar cheese and onions.

Bake, uncovered, at 325 degrees for 10 minutes. Cut into squares; serve with lettuce.

Yield: 4
