How do you make a quick easy rice pudding in the microwave instead of the pot?!
Answers: Add three cups of rice to a bowl. Mix in four slurps of melk, a pinch of salt, and a spoonful of sugar. MIcrowave on high for 2 minutes 30 seconds. Let cool and stir as needed.
MICROWAVE RICE PUDDING
1/2 c. sugar
1/4 tsp. salt
1 egg, well beaten
1 tsp. vanilla
2 tbsp. cornstarch
2 1/2 c. milk
2 tbsp. butter
2 c. cooked rice
In 1 quart casserole, blend together sugar, cornstarch and salt. Gradually stir in milk, mixing well. Microwave on high 5 to 7 minutes. Stir every 3 minutes until mixture is smooth, thickened and clear. Stir a small amount of pudding into beaten egg. Return egg mixture to hot pudding. Mix well. Microwave at medium high 1 to 3 minutes, stirring after 1 minute until smooth and thick. Add butter, vanilla and rice. Stir well. Makes 4 servings.
I often make rice pud in the microwave, but it does take a considerable time to get the rice to go gooey and soft. The first 2 minutes put it on high and then 30 - 40 or so minutes on simmer. I use as big a pot as possible (depending on how much I'm making) to ensure it doesn't boil over and I cover it all for half the time so it doesn't dry out. Later I remove the cover as my husband quite likes it caramelised. Sometimes I add more milk as I go along, so I look at it every 15 mins or so.
35g ( 1 and a half oz ) rice
25g ( 1 oz ) sugar
600 ml ( 1 pt ) milk
nutmeg
A little butter or margarine ( optional )
1; Put the rice, sugar and milk into a 1 litre ( 2 pt ) dish and stir. Sprinkle a little nutmeg over the top.
2; Cook on SIMMER for 45 minutes or until thickened and
creamy. Stir at intervals.
OR;
1; Warm the milk for 2 minutes on HIGH.
2; Stir in the rice, sugar and butter if used.
3; Cook for 4 minutes on HIGH or until boiling. Stir well.
4; Sprinkle the surface with nutmeg and reduce power to MED - LOW for 35 - 40 minutes.
This is for an 850w microwave.
