Left over Mashed potatoes!?!

Answers: i have some left over mashed potatoes and i'd like to have them for lunch but dont know how to cook them. and old italian way is to mix them with an egg and bread crumbs and some salt and pepper and fry them individually, but that akes too long and its more of an appitizer

Chowder!
I always make my chowder from my leftover mashed potatoes.
Put them in a pot with some milk or chicken broth (whatever, water will work but you just may need to add a little more seasoning), on a low/med heat.
Break it all up and let it come to a low simmer. Only trick it so not let it burn on the bottom of the pot, and don't start with too much liquid, you can always add more if it is too thick, but impossible to take it away. If you have frozen veggies like corn, peas, green beans throw some in. If you like clam chowder, just throw in a can of chopped clams. Corn and Clam and Corn and Crab are a favorite!
I'm sure you could even do this in the microwave though I've never tried it.

Mix in a little flour and seperate them like cookies and fry them into potato cakes. YUMMY!

I'm with Swiley. A little flour, and even a little grated onion and fresh grated pepper. But if you think the one with egg takes too long, then maybe making potato pancakes takes too long too. Just re-head the mashed potatos as is, add a little butter and enjoy.
Sautee in a sauce pot, some chopped onion, and 1-2 T chopped celery if you have it, add potatoes and enough milk to have some potato soup. If you have left over bacon or sausage from breakfast, tear up some in the soup. Add some garlic powder, a crumble or two of cheese as garnish and enrichment...this wont take but 5 minutes from start to bowl. Always good to have potato soup on a cold day
I would have suggested you fry them up, but nuke them in the microwave, make some gravy and a veggie , and instant lunch.

Mashed Potato Cakes Recipe
Ingredients
1 pound small baking potatoes, unpeeled
1 cup shredded aged Swiss cheese or Gruyere (4 ounces)
2 large eggs, beaten
1 green onion, trimmed, thinly sliced
1 teaspoon prepared mustard
1/2 teaspoon salt
Freshly ground black pepper
1 tablespoon oil or butter
Instructions
Cook the whole, unpeeled potatoes in boiling, salted water until tender, about 20 minutes. Drain and cool slightly. When cool enough to handle, slip off the skins and roughly mash in a large bowl.
Add the cheese, eggs, green onion, mustard, salt and pepper to taste to the potatoes. Stir to blend with a wooden spoon. With wet hands, form the potatoes into patties about 3 inches wide and 1/2-inch thick. Rinse your hands frequently to prevent sticking.
Heat a large nonstick griddle or skillet over medium heat until hot enough to sizzle a drop of water. Add the tablespoon of oil or butter (ideally, a bit of both to prevent butter from burning). When hot, add the patties, without crowding skillet, and cook until golden brown and crisp on the bottoms. Turn and brown other sides. Repeat with remaining patties, adding more oil as needed.
Menu suggestion: Serve two or three patties per person hot as a side dish or use the potato cakes as the focus of a simple meal with a high-protein soup on the side, such as tomato-bean Florentine.
Yield: 12 (3-inch) cakes
I would agree with Blair P but I would add a chop spring onion and a little more butter first.
Yes, turn your left over mashed potatoes into soup. I do, its delicious. Just add milk or half and half, butter, pepper, and cut of some shallots (the green stalky part on an onion) into them and that's it, its a great, creamy, cold weather soup.
if you want, add some grated cheese on top.
Sugar Pie’s Potato Pancakes
2 baking potatoes, peeled (or leftover mashed potatoes)
? small onion, peeled
1 egg, lightly beaten
? cup baking mix
1 tsp. seasoned salt
Canola oil
Garnish: sour cream and applesauce, optional
Shred baking potatoes and onion into a bowl. Stir in egg, Bisquick, and seasoned salt.
Heat a large nonstick skillet to med-high. Coat the bottom of skillet w/ a bit of canola oil. With a large spoon, place about 1/4 cup of potato mixture in hot skillet. Flatten out into a neat pancake. Cook about 4 minutes on one side until golden brown, then flip pancake to cook other side, 3-4 minutes more. Drain on paper towel. Continue with rest of potato mixture, adding more canola oil between batches.
Serve with sour cream and/or applesauce.

Sub yoru l/o mashed for frozen hashbrowns... combine all these goodies w/ them and bake! A few bacon bits wouldn't be bad, either.
Sinful Potatoes
1 (26 oz.) bag frozen hash brown potatoes
8 oz. shredded cheddar cheese (I like sharp)
1 (10 ? oz) can Cream of Celery soup
1 (10 ? oz) can Cream of Chicken soup
1 (8 oz.) container sour cream (can use lowfat)
1 medium onion, finely chopped
Combine all ingredients, place in a greased casserole dish. Bake at 350oF for 45-60 minutes until lightly browned and bubbly.
Put them in a dish, sprinkle in some garlic powder and minced onion. add a bit of butter, salt and pepper..... and cook on high in microwave for 2-3 minutes.
