Brown the beef with chopped onions and mix in a tsp of paprika in addition to salt and pepper to taste. Drain the access oil off.

Ingredients
1 lb. Ground beef
1 can Cream of mushroom soup; condensed
8 oz. Sour cream
1 can (small) black olives; sliced
1 can (small) mushroom stems and pieces
12 oz. Egg noodles
Directions
Cook egg noodles according to directions and set aside. Cook ground beef until it is no longer pink. Drain off grease. Add soup, sour cream, olives, mushrooms, and noodles and cook until heated through.

Poor Man's Beef Stroganoff

Sautee the ground beef and drain off the fat. Sautee a chopped onion in a bit of oil. When the onion is getting brown, add 1 cup chopped mushrooms, salt, pepper, 1 teaspoon paprika and 1/4 teaspoon nutmeg.

Sautee until the mushrooms are soft. Add the beef and a large dollop or two of sour cream. Mix and simmer on lowest heat.

Boil up the noodles!

Boil the egg noodles while at the same time browning the ground beef. Drain the excess fat and put the meat back into the pan. Add a can of cream of mushroom soup, some canned corn (or leave it out or add something else, whatever), a little milk, some seasonings (s&p, oregano, anything else you feel like adding) and then add the noodles. Mix it all together and you have a hearty meal. Not exactly gourmet, but it definitely works. Kind of like a healthier hamburger helper.

* 1 1/2 pounds ground beef * 1 small onion, chopped
* 2 (8 ounce) cans tomato sauce
* 1 cup sour cream * 1 (3 ounce) package cream cheese, cubed and softened
* 1 teaspoon sugar

* 7 cups uncooked wide egg noodles, cooked and drained
* 1 cup shredded Cheddar cheese
Directions
1. In a skillet, cook beef and onion until meat is no longer pink; drain. remove from the heat; stir in tomato sauce, sour cream, cream cheese, sugar and garlic salt; mix until blended. Place half of the noodles in a greased 13-in. x 9-in. x 2-in. baking dish; top with half of the beef mixture. Repeat layers. Cover and bake at 350 degrees F for 30-35 minutes or until heated through. Sprinkle with cheese; bake 3-5 minutes longer or until cheese is melted.

3 cups tomato juice
1 cup water
1 teaspoon salt
1 teaspoon sugar
2 to 3 teaspoons chili powder
1 teaspoon dried oregano
Dash of pepper
1 (7-ounce) package spaghetti, uncooked
Grated Parmesan cheese
Garnish: fresh Italian parsley sprigs


Preparation
Cook first 3 ingredients in a Dutch oven, stirring until beef crumbles and is no longer pink; drain well. Return beef mixture to pan. Stir in tomato sauce and next 8 ingredients; bring to a boil. Cover, reduce heat, and simmer, stirring often, 30 minutes.
Add pasta; cover and simmer, stirring often, 20 minutes or until pasta is tender. Serve with cheese, and garnish, if desired.

THE MOST EXTRAORDINARY CASSEROLE CASSEROLE

1 can mexicorn
1 small bag flat noodles
2 cans cream of mushroom soup
1 large onion, chopped
1-1/2 pounds lean ground beef
1 pound sharp cheddar cheese, grated
1 can tomato soup
1 can tomato paste
Salt and pepper to taste

Chop onion and saute in a little oil until clear.

Add ground beef and cook slowly, stirring to prevent sticking. Cook until light in colour and meat is done, but do not brown. Drain.

Boil noodles in salted water until tender. Drain.

Mix all ingredients together and pour into a large casserole dish. Cook in a preheated 350 degree F oven until bubbly and beginning to brown.
SERVES 6 - 8
