Question: At thanksgiving I always go for the turkey tail first so I do enjoy roasting some whenever I find them packaged in the store.

I sprinkle a little creole seasoning over both sides, preheat the oven to 375 degrees and make sure they are not crowded in the pan. Roast about an hour or until they are golden brown. The fat gets rendered out a bit and the skin is crispy. yummy!
