If it's a miserable day outside ( snow and or rain)?!
Answers: what is your favorite comfort food to warm you up inside and out?
I am of Scottish decent and a great hearty stew with a stout ale to wash it down. Here is a great recipe for a beef stew.
1lb of beef (Stew meat or what I do is buy a top round and cut it myself)
3 lbs of potatoes (washed and cubed. Keep the skin on adds flavor)
6 carrots (Washed and pealed if you want I don't peal them.)
4 large onions (2 onions sliced into rings and 2 chopped)
5 cloves of garlic (sliced thin)
5-6 med size tomatoes (diced)
salt and pepper to taste. Add any veggies you like
First take the meat and brown in a pan with garlic and half of the chopped onion and a little olive oil. (Add 1/2 tsp of cumin) gives it an earthy flavor, works well with the beef and the potatoes and carrots.
brown beef and put in a large stew pan. Add tomatoes, the rest of the onions, potatoes and the rest of chopped veggies. (Note fresh veggies add 15 min before the end of the stew keeps veggies from being over cooked and soggy. However if you like soggy veggies be my guest.) Add water until it covers everything cook water down for at least 1 hour. Add some other things you may like in stew if you like but this is a basic stew. Very popular in my house and very tasty.
