Veggies with breakfast?!


Question: im in an eating disorders recovery group, and once a week we have a lunch where e decide the meal and cook it based on what the challenging ingediant is. next week is white bread, and my idea of eggs and french toast got picked. the problem is we need a veggie to go with it. so, what goes with eggs, french toast and mixedberry pie(dessert)?

How about making eggs benedict and serving it on top of the french toast instead of english muffins.You do not have to add the ham.I use swiss knorr in a pkg.for hollandaise sauce.Its as good as any homemade,and so simple.
Top off with grilled asparagus spears or cooked broccoli....
or stuff the french toast with your favorite veggies,with or without a little cream cheese...

Or a mushroom quiche or mushroom omelet....incorporate mushrooms into your eggs.

make an omlet and put like peppers and mushrooms and onions in it

Colorful peppers, onions, squash and mushrooms all make good egg-veggies. Even if it's just added to your scrambled eggs. Or for fancier, make a fritatta or quiche.

One of my favorites is spinach or broccoli and mushrooms in an omelette or scrambled eggs.

Or you can make a Southwestern Omelette with green bell pepper, onion or green onion, and cheese. Top it off with salsa.

I like just plain sliced tomatoes with my eggs for breakfast, as long as they're vine ripened tomatoes.

Or, toast an English muffin, spread sliced tomatoes on top then top each with a slice of Cheddar cheese. Broil them for a few minutes until the cheese melts.

Or, toast some sourdough French bread, spread cream cheese on it, and top with slices of tomatoes.

scrambled eggs with spinach and mushrooms! maybe some onion for flavoring and if ur allowed to some mozzarela or cheddar cheese
