Simple and easy.
Southern-Fried Chicken
1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard
1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.
2. In a large deep cast iron frying pan, melt lard over medium-high heat to 375 degrees. I use the splatter test, put a little water on your fingers and flip it into the grease, when it splatters the heat is right. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels

Oil too high if your pulling out too soon, that means your buring your chicken and think its done. Also I have a homemade spice mix I use, season the chicken then bread. Depending on your pieces , and size atleast 15 mins in the fryer, I don't time I just know, you can use a thermomter and see if it hits 180. on the inside. Also when you fry leave your meat out to room temp. Helps with the cooking.
simply preheat some oil, then add the chicken witch you must coat in flour then dip in egg. then dunk in panco or breading of any kind. then put in the oil witch you preheat for 6 minutes.
I'll do my best to put step by step instructions on how I make my chicken...
1) Place 1 # of chicken (breasts, thighs, legs) whatever you have, in a large bowl. Add 2 T garlic powder, 2 T onion powder, 1/2 T cayenne pepper.
2) Mix around and add enough buttermilk to cover.
3) Let set overnight if possible. If not, at least let it set for 4-5 hours.
4) Get 2 cups of flour and season with 1 T salt 1 T pepper. You can add my cayenne if you like that spice.
5) In a large pot, bring up 4 cups of oil to 340 degrees. Preheat your oven to 400 degrees.
6) Remove chicken from buttermilk and place right into flour. Toss around untill completely coated. Place on a rack.
7) Place chicken into the oil, gently placing it away from you. No more than two pieces at a time.
8) Cook in oil until the chicken gets a crispy brown coating.
9) Remove from oil and place back on rack. Place rack in the oven and cook until you reach an internal temp of 165 degrees. Or until you cut one open and the juice flows clear, no pink.
10) Season with salt and pepper.
( Please note that the thighs and legs will take longer to cook than the Breasts. So don't overcook the breasts waiting for the thighs to cook!!!!)
