Answers: Can you give me simple ideas for eating avocado in your home? Nothing too difficult to make or hard to find ingredients... I'm only moderately handy in the kitchen and live way out in the country.

I like to eat them with crackers, cheese and tomatoe. In wraps, sandwiches, topping for tacos, by them selves.
To store the wrap them and place in the fridge, the open peices may brown some just cut it away or add a little lemon juice before u store it away. Its will last days!
When we were stationed in Texas, I knew a mom who let her kids snack on avocados with just a squirt of lemon juice. they loved it.
I like it mushed up with roasted garlic salt and pepper. Nice to dip tortilla chips in .
I think a day or two is the limit, don't let it go any longer than that.
I put cheese and salsa on toasted bread or bagel with the advocado, and some onions
I store the other half in an airtight container for a day or so
add chopped tomatoes and salsa and pepper (black). Mix it up and voila, you have guaculamole. Serve on chips and crackers.
Or, use it straight on a bacon, lettuce, tomato and avacado sandwich.
I absolutely love to just put slices on buttered toast and sometimes melt cheese on top of that in the toaster oven or broiler. Simple and yummy! Yes, you can store the other half for a day or two. I keep the large pit in the half i'm storing...I don't know why but I do. ha ha ha. And then just wrap it up in some plastic wrap. It will discolor a little but is fine to eat.

YUM i love avocado, its nice mashed with chicken and rolled in pita bread with a sprinkle of cheese on top.To make it last up to 2 days sqeeze lemon juice over it and wrap in cling
Avocados are so delicious on there own, you don't have to "spruce" them up much. I like them best with just a little salt and pepper, and eat with wheat thins, or some cracker, pita bread...whatever. The lemon juice mentioned above sounds delicious also. To store the half of uneaten avocado, leave the seed in! For some reason it keeps it from browning. You must also keep it in an air tight container or ziplock bag with all the air squeezed out. If you do have a little browning on it, just scrape off the top layer and the rest beneath it will be fine. Now I am hungry!
Slice up some avocado and section an orange and throw the pieces over nice greens. Toss with a light vinaigrette and crack a little pepper over the top. Lovely salad.
Or...
Make tuna or chicken salad. Stuff a scoop inside half of an avocado. Nice lunch.
I, as well as my kids love to eat avacados cut in half with mayonnaise,lemon or lime juice and pepper to taste...eat it right out of the avacado peel with a spoon.
To store add a little lemon juice, wrap in plastic...1 maybe 2 days tops...but they never last that long at our house...

Cook some shrimps in a little water for only a few minutes and drain.
Add mayo and scoop in to the hollow of halved avos

Cut in to thin slices and mix in to a mixed salad.
Simply add some freshly ground black pepper and salt to them and serve.

Serve them as a side dish with some finely sliced beef jerky.
All the answers have merit and worth trying. After living in Tx for almost 20 years I was addicted to avocados. My personal favorite was to half it, remove pit, sprinkle a bit of lemon juice on each half, pour a bit of either Italian dressing or Blue Cheese dressing in the center and ENJOY. As for storing, you will get discolorization, however if you sprinkle lemon juice on anything you wish to store and then wrap TIGHTLY, it will be safe to eat the next day........of course I never had that problem, I'd eat the whole thing.
