My oven is broken and I'm dying...what to fix for supper?!


Question: I cook most meals at home and I'm cooking for 4...what are some good meals and desserts that I can make without baking anything? We had chilidogs and stirfry earlier this week so I need some new ideas. I do have a crockpot, an electric skillet, and a small toaster oven. Recipes appreciated! Thanks!

I'm in the same boat you are! I've been crock potting it for about a month now.

You can make a decent potato soup in the crock pot using the boxed scalloped potato mix. Pretty much follow the reg directions but amp up the liquid by adding some chicken stock. Also add some ham cubes. Cook in the crock pot for a few hours and right before you serve, hit it w/ some heavy cream and garnish w/ sour cream, gr. onions and shred cheese.

Lasagna
12oz package wide egg noodles
1 1/2 lbs ground beef
1/2 an onion, chopped
28oz spaghetti sauce
couple of teaspoons italian seasoning
small package sliced pepperoni, halved
12oz shredded mozzarella
12oz shredded cheddar

Cook noodles according to package directions. In a large skillet, cook beef and onion over medium; drain. Stir in sauce and seasonings. drain noodles. In a 5qt crockpot, coated with non-stick spray, spread a 1/3 of the meat sauce. Cover with a 1/3 of the noodles, then a 1/3 of the pepperoni. Sprinkle with a 1/3 of the cheeses. Repeat layers twice. Cover and cook on low for 3-4 hours or until heated through and cheese is melted. serves 6-8 people.

Crock pot Chicken
Place boneless, skinless chicken thighs in a crock pot with thin slices (or julienne) carrots, and chunks of pineapple. Pat everything down into one layer, and cover with teryaki sauce. Cook until the meat falls apart. Serve over rice.

BBQ chicken
Chicken tenders
2 bottles of bbq sauce
Put chicken in the crock pot and cover with bbq sauce. Set on low and cook 8 hours. Serve on hamburger buns with chips.

Crock pot Mexican casserole
1 lb ground beef
3 cups corn chips
1 medium onion, chopped
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 ounce) can Rotel Tomatoes
2 cups grated cheese

1. Brown ground beef and drain off fat. Mix well with mushroom soup and rotel tomatoes.
2. Line bottom of slow cooker with 1 cup of corn chips. Add 1/3 of onion, sprinkle with 1/3 of grated cheese and add 1/3 of meat mixture. Repeat layers, cover and cook on low 6-8 hours or on high 3 hours.
3. You may also bake in a casserole at 325 degrees for 45 minutes.

Redneck smothered stead (didn't name it I got it from a nurse when she was renovating her kitchen) It's more like a salsbury steak sorry it's from memory
4 cube steaks or hamburger patties
2 cans cream of mushroom soup
sour cream
1 tablespoon milk
seasonings you like

cook your steaks/patties on your skillet. Microwave your soup so it loosens up add sour cream and milk. Add your meat and microwave another 5 min or add the mushroom gravy on top.

Ranch Chicken Pitas

Chicken Ingredients:
8 oz. boneless skinless chicken breast strips
1/2 (1-ounce) envelope dry ranch salad dressing mix
1 tablespoon vegetable oil

Sandwiches Ingredients:
4 (6-7 inch) pita fold bread
4 cups torn Romaine lettuce
1/2 cup red bell pepper strips
4 onion slices, halved, separated
1/3 cup sour cream
2 tablespoons mayonnaise
3 tablespoons milk

1. Heat oven to 350* F
2. Coat chicken pieces with 2 teaspoons salad dressing mix.
3. Heat oil in skillet; add chicken pieces. Cook over medium-high heat, stirring occasionally, until lightly browned (5-7 mins).
4. Wrap pita breads in foil, bake for 4-5 minutes or until heated through.
5. Combine lettuce, red bell pepper and onions in medium bowl.
6. Stir together sour cream, mayo, and remaining salad dressing mix in small bowl. Stir in milk. Pour mixture over lettuce; toss lightly. Add chicken; toss gently to coat.
7. Spoon chicken mixture into warm pitas. Fold in half; secure with tooth picks, if desired.

Makes 4 sandwiches

Make a curry in the skillet. meat stew in the skillet, they are amazing things, you can make anything in them. Microwave?

How about spaghetti, or chili or burritos, tacos...

Beef stew of course~ or chowder and grinders with cold cuts! yum! or just boil a corned beef with some cabbage and carrot and potato pieces, delicious in the crock pot, delish.

Lemon chicken over pasta. Brown chix breast, add 1 can campbells cream of chix, one can peas, 3-4 squeezed lemon juice, basil to flavor. Dump over thin linguini. My kids love it.

Oooooooooh I know. Pulled pork bbq sandwiches.

Pork roast (depending on size of slow cooker)
bottle of sweet baby rays
sliced sweet onion
cloves (maybe 10)
3 tblspoons cider vinegar (optional)


Place pork roast, sliced onions and vinegar in crock pot. Push cloves into pork roast. salt and pepper, and fill with water. set on low for 8 hours

Debone and shred pork roast and add back to slow cooker. remove cloves if you can. Add bbq sauce and cook for a few more minutes on high. Serve on buns w/ cold salads

Grill up some chicken breasts in your skillet. Season with salt, pepper and paprika and cook in butter. Serve with some steamed veggies. Make some pudding for dessert. Easy.

I love my crockpot...
Keilbasa and saurkraut, beef stroganoff, swedish meatballs..there are so many things you can make in your slow cooker. Just turn it up to high, and you'll have plenty of time to get it cooked by dinner time.

Go to the attached link in allrecipes.com. Put in the type of cooking method you want and the ingredients you have on hand. You will quickly get a great list of recipes that will suit your situation.

I use allrecipes very often, it has a great feature that collects user feedback. So it's just like talking to a friend who may suggests changes, to the orginal recipes or let you know it is perfect just as written.

You can roast a whole chicken in your electric skillet! Mine is big enough and the lid is tall enough to do 2 at a time, actually. Just season up like you would to raost it in teh big oven, and put in the elec. skillet on the same temp. Start breast side down, flip about half-way thru.

Soups
Pork Chops grilled in a pan; or ham slices; ground beef browned and made into tacos or spaghetti
Buttered Pasta or Potato chunks (maybe toss in a little garlic and fresh parsley)
Potato Pancakes (latkes) as a side dish.
Steamed Veggies of all sorts
Cheese or white sauce on some veggies
Corn on the Cob
Hot Water Cornbread Cakes for a bread (or regular bread in your toaster oven; just do in batches)
For dessert, you can do dumplings in fruit; puddings, tapioca, rice pudding on the stove top, Fresh fruit salads; pralines, fudge, or other stove-top candies, a no-bake pie or cheesecake; smoothies using frozne fruit and yogurt or milk in the blender

I make a skillet bbq chicken that everyone loves. I like thighs, but you can use whatever you like. I season bone in thighs with salt and pepper and brown them in a little olive oil on a high heat. Then I pour in 1/2 jar of bbq sauce and a cup of water. I let this cook on a low heat for about 1/2 hour covered in the pan. Turn the meat about every 10 minutes. Then uncover and cook for about another 10 minutes. It will get a nice glaze. I often serve this with home made potatoes chips, but fries would be good too, corn on the cob and salad.

This is a wierd recipe, but it's really good. Cook up about 1 lb. ground meat (I generally use turkey for health, but meatloaf mix does taste better) with some seasonings. Generally I use salt, pepper, oregano and garlic powder. Normally I would use fresh herbs and seasonings, but in this case dried is better. Then add about 3/4 jar of tomato sauce (I use Newman's own basil marinara). Let this cook down until it's really thick. Then slice a loaf of crusty bread as close to the top you can. I generally use Italian or Portugese bread. Fill 1/2 way with the meat mixture, put on a few dollops of ricotta cheese and top with mozz cheese. Put this on a medium heat pan with a heavy pan on top for about 5 minutes per side. It's really good. I serve this with salad too. But it's one veggie I can get everyone to eat, so we have it a lot.

Another thing is to think outside of the box. My daughter loves dinner for breakfast because we rarely have big breakfasts together. She loves bacon and syrup. Fruit and yogurt dip. Whole wheat waffles with peanut butter and honey. The key is to warm everything so it's as comforting as dinner.

Grilled cheese sandwiches and tomato soup can be dressed up by using good, hand cut, French or Italian bread and a mixture of cheeses instead of simple American cheese. I brush the outside with melted butter, fill with a layer of mild cheddar (for the melting quality) and sharp cheddar (for the taste). The important thing is to be patient and cook over medium heat and to press the sandwiches using a heavy pan on the top. We like to serve thin sliced sweet onion and tomato with the sandwiches. As for the soup saute one large onion diced and 2-3 cloves garlic minced in a TBSP of oil, add a 32 oz can of diced tomato (S&W or Muir Glen are delicious) and 32 oz canned chicken broth. Flavor with died oregano or thyme. Simmer 10 minutes, season with salt and pepper. Then puree with your stick blender or food processor. You could add some cream or sour cream.

Or go mexican. Make "spanish" rice by substituting a can of spicy V8 for a portion of the cooking water and adding a half teaspoon each of cumin and chili powder. Dress up a large can of refried beans by adding a dash of pepper sauce, some pepper, and the juice of a lime. Make a salad by shredding iceberg lettuce and dress it with salsa mixed with yogurt or sour cream and spiked with a little vinegar. The main dish can be quesadillas. Offer flour tortillas the same size as the pan you will be using. Have available shredded cheese(s), canned diced green peppers, minced scallions, olives, shredded chicken, or shrimp meat. Whatever appeals to you. Serve with guacamole, some sour cream and and lots of salsa.

SAUSAGE BEANZ AND MUSHROOMS and stew pots are all I can think of.

I've made this a few times and the family LOVES it! Plus, it's sooooooo easy! I use flour tortillas instead of corn, though... just my preference.

CROCK POT CARNITAS

2 to 4 lb. pork butt roast
4 garlic cloves
1 fresh jalapeno pepper
1 bunch fresh cilantro
1 lg. can lite beer
Corn tortillas (I use flour tortillas!)

Insert garlic cloves in roast; place in crock pot with whole pepper and half bunch of cilantro which has been chopped. Season to taste. Pour in beer. Cook on high 4 to 6 hours until fork tender. Remove meat; shred. Serve in steamed tortillas with tomatoes, onions, cheese and cilantro.
