here's an eggless recipe for Chocolate pecan cookies.
1/2 cup unsalted butter
1/4 cup granulated sugar
1 teaspoon vanilla
3/4 cup all-purpose flour, plus
3 tablespoons all-purpose flour
1/8 teaspoon baking powder
1/2 cup chunky chocolate pieces
1/4 cup pecan halves, salted,roasted
Preheat oven to 300F degrees.
Beat butter and sugar in bowl of heavy-duty electric mixer until light and creamy.
Beat in vanilla.
Add flour and baking powder; beat just until mixed.
Stir in chocolate pieces and pecans.
Dough will be firm.
Shape into 6 or 7 lemon-sized balls.
Arrange 3 inches apart on ungreased baking sheet.
Using palm of hand, flatten each cookie to 1/2-inch thickness.
Bake cookies until faintly browned at edges, about 45 minutes.
(The cookies are so big that they require a long baking time.) Remove from oven; let cool on wire rack.
yes you need the eggs
Yes, you really need the eggs.
Looks like no cookies for you, then. Don't bother using anything as a substitute that others might suggest, the cookies will not turn out right if you do.
Trust me you need the eggs... it binds everything together. If you want a scientific answer, check out Alton Brown from the food network. I am sure he's reviewed this one on his show and website before.
Go to the store and buy some eggs or you can come to my house and I will give you fresh eggs straight from my chickens.
no you dont use mayo
Yes the eggs are important to the recipe. if you don't use them they won't bake right. they will basically taste like dough balls.
plus they wont raise as well. Not only that, but the recipe calls for eggs. You wouldn't build a car without tires would you?
Eggs are definitely the best option. I haven't tried it with cookies, but often, mayonnaise works as an egg substitute. Mayo is essentially made of oil and eggs (sometimes vinegar is added), so you'd want to take some of the oil out of the recipe, as well.
Wait till you can go to the store...your cookies will need the eggs!
