Serves Makes around 16 crumpets


You need:
4 cups plain flour
2 tbs baking powder
1 1/2 tsp salt
1 1/2 tsp sugar
3 cups warm water
15g compressed yeast or 1 tsp dry yeast (sifted in with dry ingredients)

Method:
Sift flour, baking powder, sugar and salt into large bowl. If you are using compressed yeast, dissolve in water and add to dry ingredients. Beat until smooth.

Crumpets can be cooked in a lightly greased frying pan (over low heat) with lightly greased egg rings. Heat the egg rings by placing them in the pan. When hot, 3/4 fill the rings with batter.

Allow to cook over a low heat for approximately 10 minutes, or until surface is covered in holes. Remove rings, then cover pan and allow crumpets to cook for a further 2-3 minutes, or until surface has set.

Remove from pan, cool on wire rack. When cold, toast and serve with butter and honey.

No recipe but Trader Joe's carries crumpets.

1 c. all-purpose flour
1 pkg. active dry yeast
2/3 c. milk
1 tbsp. butter
1/4 tsp. salt
1 egg
1/4 c. butter

In a small bowl combine 1/2 cup flour and yeast. In saucepan heat milk, 1 tablespoon butter and salt, until warm, stirring constantly. Add to dry ingredients in mixing bowl; add egg. Beat at low speed of electric mixer for 1 minute, scraping side of bowl constantly. Stir in remaining flour. Beat until smooth. Cover and let stand until doubled (about 1 hour).
In large skillet melt half or the remaining butter. Lightly brush crumpet rings with butter; place in skillet. Pour 2 tablespoons of batter into each ring. Cook over medium heat until the crumpets are browned on one side (4-5 minutes). Remove the ring, turn crumpet, cook 4-5 minutes. After 4 crumpets, clean ring with paper towel. Repeat process.

Crumpet rings, crumpet rings can be made by cutting the bottoms out of tuna fish cans.
In a small bowl combine 1/2 cup of the flour and the yeast. In a saucepan heat milk, 1 tablespoon butter and salt until just warm stirring constantly. Add to dry ingredients in bowl; add egg. Beat at low speed for 1 minute, scraping the sides of the bowl. Stir in remaining flour, beat until smooth. Cover and let stand for about 1 hour until double in bulk.

In a large skillet or on a griddle (an electric frying pan works good) melt half the remaining butter. Lightly brush the crumpet rings with butter. Place on the pan or griddle. Pour 2 tablespoons batter in each ring. Cook over medium heat until the crumpets are brown on one side, 4 or 5 minutes. Remove ring and turn and cook 4 or 5 minutes longer. Repeat until all batter is used. Makes about 8 crumpets.
