I did one many years ago when my daughter was small. You need a basic Victoria sponge mixture, 3 eggs, 6oz each of sugar, margarine, 5oz flour, 1oz cocoa powder. Cream sugar and margarine, beat in eggs, fold in flour and cocoa powder. Cook in a 2 pint basin, depends on whether a fan oven or not, for about 45 minutes, I used 160C degrees, check with skewer to see if done. If not, bake a bit longer.
When cold, cover with your favourite butter icing. Can't give quantities, I don't measure, just stop when it looks right, but no doubt you can Google if in doubt. Ingredients, icing sugar, butter, cocoa powder, with water if needed. Shape one area of butter icing into a snout.
Then you have a choice. I used Cadbury's chocolate drops for the prickles, each cut in half. I have seen a recipe since with broken Cadbury's flakes used. You can use glace cherries, sweets, dried fruit, whatever, for eyes, nose and mouth.
It must be at least 25 years ago, but my hedgehog went down well. I haven't done one since!
