Do you have a recipe for the lovely egg salad mix ?!


Question: We really enjoyed this dish, it had eggs, mayo and dill in it but it dont know in what quantities. This was on a tour of Australia - well Syndey actually for the cricket and then New Zealand.

Olive and Mustard Egg Salad

4 Hard-boiled Eggs, peeled and chopped
? cup Light Mayonnaise
2 tablespoons Pimento-Stuffed Green Olives, chopped (about 5 or 6 large olives)
1 teaspoon Sweet white onion (optional), finely chopped
1 teaspoon Hot Prepared Mustard (or Dijon)
1/8 teaspoon Paprika
1 tablespoon Fresh Parsley, finely chopped
1 tablespoon Sweet Pickle Relish
To taste: Salt & Freshly Ground Black Pepper (about 1/8 to 1/4 tsp of each)

Instructions:
In a large bowl, combine the mayonnaise, mustard, relish and paprika. Add the rest of the ingredients, half of the parsley and mix well.

Season to taste with salt & the ground black pepper. Garnish with the rest of the parsley.

Chill for at least one hour before serving to help the flavors combine.

i'm liking Kate's recipie, minus the relish...

I think this is a very simple dish

3 eggs hard boiled and chopped finely
5 tbsp mayo
3 tbsp of dill pickle relish
sprinkle of dill weed to top

in a bowl mix all ingrediends and set in fridge for an hour for flavors to incorperate and serve in between your fav bread.

traditional egg salad

INGREDIENTS:
7 hard boiled large eggs
1/2 cup diced celery
1/2 cup diced sweet pickle
3 Tbs. mayonnaise
1/4 tsp. ground pepper
1/2 tsp. salt
PREPARATION:
Slice eggs in half and take out 3 yolks, put them aside. In a medium bowl chop the rest of the eggs into small pieces. Add celery, sweet pickles, salt and pepper. In a small bowl, take the 3 yolks and mash them with a fork.
Add mayonnaise and mix until creamy. Mix the dressing with the egg mixture. Serves: 4.

I like a simple egg salad. Here's the way I make it:

8 eggs, hard boiled
2 tablespoons mayonnaise
1 tablespoon Dijon style mustard
1 teaspoon dried dill weed
salt and pepper to taste

Peel and chop the eggs. Combine the egg, mayonnaise, mustard, dill, and salt and pepper. Mash well with a fork or wooden spoon.

Sometimes I add a couple tablespoons of finely chopped dill pickles, or raw celery, if I want a bit of crunch in the egg salad.

If you don't want the mustard in the eggs salad, omit it and increase the mayonnaise to 3 tablespoons.

4 Servings
Measure Ingredient
3 tablespoon Fresh dill, minced
? cup Mayonnaise
1 tablespoon Pimentos, minced
1 teaspoon Dijon mustard
6 each Hard boiled eggs, peeled and diced
Blend first 4 ingredients together. Mix in diced hard boiled eggs. Refrigerate for several hours to allow the flavors to blend.

I really like Terris rendition, with the addition of a little yellow mustard about, 1 T. About 1 T fresh chopped dill in the salad folded in, or 1/4 -1/2 t dried dill leaves, I do not wait to eat...I eat as fast as it is stirred up!

The Perfect Egg Salad Sandwich

Ingredients:
8 Eggs; hardboiled, cooled and
-shelled
1/2 c Finely chopped red onion
3 Garlic cloves minced
1 1/2 ts Salt
1 ts Coarsely ground black pepper
1 c Mayonnaise
1/4 c Fresh dill, cut up

Separate the yolks from the whites of the eggs and crumble into a medium
bowl.Lay the whites on a cutting board and finely chop. Add to the yolks.
Stir in the onion, garlic, salt, pepper,dill, and mayonnaise.
