How long can you (or should you) refrigerate fondant icing before using it?!
I was planning on making and tinting it, then leaving it in a ball in the ice box for a week before the party.
Can anyone tell me if this will help or hurt the fondant?
Thanks!
Answers: I am making several cakes for a friend's party, and I would like to make and store the fondant icing the week before the party. It is a fondant recipe that uses marshmallows as its base, and I don't know if it will last in the refrigerator.

Yes, you can keep the fondant in the refrigerator for weeks, even months,(it has to be very close in a plastic container and in a plastic bag before the container) the only thing you have to do is at the moment of to be use, put it into the microwave for a few minutes, enough for the fondant getting soft, at this point put some shortening in your hands and knead it, its going to be as good as when you prepare it. And remember every time the fondant gets dry you do the same, in the microwave and then shortening and kneading and is going to be good again. guarantee!
surgar does not go bad
Fondant I do not know but it sounds like if you do not plastic wrap it.. it will dry out..
