Help, this is what I have...?!
Answers: I have 1 red,yellow, and green pepper, onion, broccoli, and mushrooms. I have some pasta i want to add but am stuck on the sauce i want to use. not tomato, something light but flavorful. I have some white wine but not sure if it will go. any help is greatly appreciated.
saute the vegetables, add your white wine, add some butter, garlic and paprika, this will make a light coating for your meal, add sopme fresh basil, or parsley if you have some!
Make a very light white sauce. Will be great.
Sautee the peppers and onion, broc and mush can be lightly steamed if you don't want to sautee or just use them all raw, I prefer the sweetness of the onion and pepper cooked. Add veggies to the cooked pasta and dress all with the following.
Make a vinaigrette with:
3/4 c olive oil or salad oil
1/2 c cider vinegar
1/2 squeezed lemon
1/4 t garlic powder
1 t black pepper
dash of oregano leaves or powder
dash of cayenne
This depends on how much sauce you need. Basically, take about 1 c. of wine and let it simmer for about 5 minutes until it reduces by half. Then whisk in 1/2 c. butter and about 1 tbsp. salt and pepper. The sauce should be made last it will separate easily.
Just sautee the veggies up and season your pasta water really well. Reserve some of the pasta water just in case your pasta is a little dry. Toss the veggies and pasta in the sauce. If it's dry add a little hot pasta water. If you have add some garlic and red pepper flakes to your veggies while they are cooking.
I would use a cheese sauce to blend all the items in. It would be delicious with vegetables that have been pan fried to bring out the flavour and mixed into cooked hot pasta.

I would just go with good old aglio et olio - sauteed garlic and olive oil. Add a little crushed red pepper for some spice, if you like hot.
Try a light sauce. I usually get minced garlic and a little seasoning with olive oil and it will be great.
CREAM OF MUSHROOM WOULD BE GREAT!!!!
Saute 3 cloves fresh crushed garlic along with your peppers and mushrooms in Olive Oil, add 2 cups white wine and simmer. Add a sprinkle of Italian herb blend seasoning and simmer some more. After 15 minutes add 1 cup fresh grated Parmesan cheese and 1 cup cream. Simmer for 2-3 minutes and serve over your pasta. It's delicious.
