Am I losing the nutrients of the veggies when I saute them as I would if I boiled them?!


Question: I love the flavors. Just a little crunch to them....and I am aware that boiling them takes out all of the good things in them.

Yes boiling takes out all the vitamins and nutriients but from what I know sauteing doesnt. I too love the crunch they still have, and so do my kids its the only way I can get them to eat cooked veggies some times. And as long as your not using to much oil or butter they will still be healthy and good.

I think you retain more nutrients when you Saute them

This was just on the news last week, saute them, or microwave them but when you boil them they do lose nutrients.

if you want to keep the nutrients at their highest , steam them , you can flavor the water in the bottom of the steamer

TECHNICALLY ANY TIME YOU COOK A FRUIT OR VEGGIE YOU WILL SURELY LOSE SOME OF IT'S CONTENT OF NUTRITION. THAT IS WHY STEAMING THEM IS THE BEST METHOD! AND I SUGGEST IF YOUR GOING TO STEAM THEM THAT YOU GET A PROFESSIONAL STEAMER! OTHERWISE YOU WILL BE UPSET WHEN YOUR VEGGIES DON'T TURN OUT LIKE THEY DO IN A RESTRAUNT.

You don't lose much nutrients when you saute them as long as you use a hot pan to "seal" in the flavors and don't cook them too long.

You're actually retaining more nutrients because you're not boiling them down to nothing. The fact that they're still crisp shows that you're keeping them closer to fresh standards. Another good way is steaming for just a bit. I like my veggies to have a little crispness to them as well.
